Everyone’s got a few like ‘go-to recipes’. I’m sure something popped up in your head right away after reading that. Maybe a favorite pie for the holidays or a chicken recipe that makes a weekly appearance. Well these scrambled eggs are my everyday staple. They are like my madewell tote bag that I never EVER leave the house with. A few years ago I decided I loved eggs so much that I researched the CRAP out of them. Important findings that I still use today:
-Eggs are a protein so treat them like one. Cook them low and slow for ultimate tenderness.
-A non-stick pan is your trusty side kick.
-Keep them moving. This ensures even cooking time and doesn’t allow them to burn!
-Folding them over with a silicon spatula in the pan instead of actually whisking the crap out of them will avoid cottage cheese crumble eggs (which no one wants, ever)
-They always need a little salt and pepper love
I’m not joking when I say I seriously have these every ‘regular morning’. Yesterday was Jared’s birthday so we went go carting and had a fun day out and I had to resort to a spinach and feta breakfast wrap which was by all means really good but also REALLY needed a side of scrambled eggs with avocado. I swear I feel like I’m cheating on my breakfast if I don’t have them! These eggs and a bowl of fruit are my go to every.single.morning. What’s your morning staple like ?!
PERFECT SCRAMBLED EGGS
2 Whole eggs
2 Egg Whites
1 Tablespoon of whole milk or half&half
+Non Stick spray, butter or oil
Great Toppings // red pepper flakes // avocado sliced or mashed // minced herbs // salt&pepper
In a small bowl whisk eggs, egg whites and milk until light in color and foamy.
In a non stick fry pan coat with non stick spray (non stick spray is my easy choice and always works) heat to medium high heat (I have an electric stove top and I set it to 6). Pour egg mixture in and turn heat to low. With a rubber spatula or wooden spoon slowly and continuously fold eggs and keep them moving. Moving them consistently will keep them from burning and gives them an even consistently and color. Continue cooking for 1-2 minutes and top with salt and pepper.
My fav topping combo: salt&pepper // red pepper // mashed avocado
