Happy Spring!
If you didn’t know California kind of had ‘as real of a winter’ as it gets over here. While I was very happy for all the rain I am also quite stoked to break out my sandals and get on with the year.
On Sunday I straight up lounged in my bed until 11:30AM and it. was. glorious. Goodness I can’t even remember the last time I did that, sometimes your body just needs a weekend morning break. I didn’t even have to get out from under the covers for coffee (thanks J!).
Now that spring is in full throttle and I’m feeling fresher and fresher I thought I would bring to you of a few of my favorite things and finds to brighten up your day!
1.) Lately all I want to decorate with and put in my flower arrangements is gorgeous red bougainvillea. It’s a staple in California around this time of year and it is STUNNING! So inspiring and looks incredible in photos. Take a peep of this gorgeous tablescape bursting with boug’ .
2.) My most inspired blogger these days: Julia Hengal from GalMeetsGlam. To say that Julia’s content is inspiring is an understatement. You can tell that every photo is gorgeously crafted and I would swap lives with her in an instant (and I love CA) but man does she make Charleston look good!
3.) Videos! We recently made a video for the blog (that you can watch here! ) and it follows a spring dinner party and little quirks of what the college housewife is about. You guys I am so in love with this little video. I teamed up with Will Call Cinematic and couldn’t be happier with how it turned out.
4.) Blending anything and everything with my VITAMIX! Now that spring has hit I am all about the easy cheeseboards and simple light recipes! This is my first Vitamix I have ever had in my 24 years of living and what a game changer! Smoothies, butters, BROWNIE BATTER! You name it!
Which brings me to my post today!
There are two desserts that I would rather put in my body than anything else: Chocolate chip cookies and brownies. If you put these two things in front of me I will 100% eat them every time. No self control once so ever.
For the days (probably lady days) that you feel like you need half a pan of them these are for you. I channeled my inner health qween and bought some coconut flour. I found that except for the consistency and that they are a little ‘earthy’ (in a nice way!) that these brownies were great. Like still as great as a regular brownie great.
As I was forever scrolling through my phone in the car (thanks for always driving boyfriend) I read an article on buzzfeed that said there was over 1500 calories in 8oz of butter and fewer than 400 in 8oz of avocado. Seeing as I’m trying to get back into all my sundresses without sucking in 55 out of 60 minutes every hour, avocado seemed like a good replacement.
So I said what the heck. I tried it and was oh so pleasantly surprised. I was even happier that I could cream up all the batter ingredients in my vitamix and voila! Wonderfully delicious chewy brownies with half the fat and calories.
You’ve gotta give them a try. If you don’t like them and can’t get past putting a stick of butter in your recipe, totally fine. But when you take that first bite and realize they are magically delicious, you will be oh so happy.
Avocado and Almond Brownies
2 Whole avocados pitted and removed from skin
2 Whole Eggs
2 Teaspoons of vanilla extract
1 Cup of organic brown sugar
¾ Cup of coconut flour
½ Cup of dark chocolate cocoa powder
½ Teaspoon of kosher salt
½ Cup of whole almonds
1 Cup of dark chocolate chips optional
Preheat oven to 350 degrees Fahrenheit. Line the bottom of an 8×8 brownie pan with parchment paper, grease and flour. Set aside.
In your Vitamix add in pitted and skinned avocados, eggs, vanilla extract and blend on low until creamy. Add in brown sugar, cocoa powder, coconut flour, and salt. Add in whole almonds and pulse 5-10 times. Transfer batter large bowl and stir in ¾ cup chocolate chips. Transfer batter to brownie pan and bake for 25-30 minutes or until brownies are set.
Allow cooling for 20-30 minutes before cutting. Enjoy!
