Kale Caesar Chopped Salad

This delicious Kale Caesar Chopped Salad is my absolute favorite way to eat a Caesar salad. Made with classic ingredients like crisp romaine and kale lettuce, nutty Parmesan and creamy caesar dressing.I put my own healthy twist topping it off with juicy cherry tomatoes, crunchy pistachios and seared ahi tuna for extra protein.

  • 1 ahi tuna steak 
  • 2 tsp olive oil
  • Kosher Salt
  • Ground Black Pepper
  • ½ cup cherry tomatoes halved
  • ¼ cup shelled pistachios
  • ¼ cup golden raisins

Instructions

  • Sear your ahi tuna steak: Blot dry your ahi tuna steak. Brush on an even layer of olive oil and season well with salt and pepper. Heat a medium sized heavy bottom skillet on medium-high heat.
  • Sear ahi tuna steak for 1-2 minutes on each side. Cover with foil and let rest for 3 minutes.
  • Assemble your salad kit on a large plate or bowl.
  • Top salad with mini cherry tomatoes, golden raisins, and pistachios. 
  • Slice seared ahi tuna steak and top on salad before serving.
