Strawberry and Cream Overnight French Toast is an easy breakfast to prep the night before and enjoy the next morning, warm from the oven!

Ingredients

Strawberry French Toast:

  • 3 cups Strawberries quartered (and divided)
  • Zest of 1 Lemon
  • Juice from 1/2 lemon
  • 1 cup Jam strawberry preferred
  • 1 loaf Brioche Challah, or French bread, cut into cubes
  • 6 large Eggs
  • 1 cup Milk
  • ½ cup Heavy Cream
  • 1 Tablespoon Vanilla Extract
  • ¼ cup Honey
  • ½ teaspoon Salt

Vanilla Bean Whip Cream:

  • 1 cup Heavy Whipping Cream
  • 2 Tablespoons Sugar
  • 1 Vanilla Bean sliced down the center and seeds scraped
  • 1 teaspoon Vanilla Extract
  • Maple Syrup + Powdered Sugar for serving

Instructions

Strawberry French Toast:

  • In a small bowl, mix together 1 cup of strawberries, lemon zest, lemon juice, and jam, set aside.Preheat oven to 350 F.Place bread cubes onto a large baking sheet and bake for 8-10 minutes, or until toasty and lightly golden.In a large mixing bowl, whisk together eggs, milk, heavy cream, vanilla extract, honey, and salt.Place the bread cubes into a large casserole dish and pour egg mixture evenly over the top. Dollop bread-egg mixture evenly with strawberry jam mixture. Cover overnight French Toast and refrigerate overnight. (Or, if you are short on time, a minimum of 30 minutes).Preheat oven to 350 F. Remove casserole dish from refrigerator for at least 30 minutes. Uncover and bake overnight French Toast for 35-45 minutes, or until tops are golden brown. Serve with vanilla bean whip cream, maple syrup, and powdered sugar.

Vanilla Bean Whip Cream:

  • Using a hand mixer or a stand mixer fitted with a whisk attachment, whip the heavy cream, sugar, vanilla bean seeds, and vanilla extract on medium-high speed until medium peaks form, about 3-4 minutes.
