Strawberry Gin Mojito

This strawberry gin mojito is a floral, fruity, fizzy take on your classic mojito. Also known as a 'southside' cocktail, this drink swaps rum for gin and soda water for champagne. A refreshingly light cocktail to whip up on a warm afternoon.

Ingredients

  • 12 whole fresh strawberries 
  • A handful of fresh mint leaves 
  • 8 ounces gin I like Hendricks 
  • 4 ounces fresh lime juice 
  • ¼ cup simple syrup optional
  • 3 cups champagne 750 ml bottle or soda water

Garnish:

  • Lime wedges
  • Mint leaves
  • Strawberries 

Instructions

  • In a large pitcher muddle together strawberries, mint leaves, and gin. Muddle together until most of the strawberries are crushed and their juices are released. 
  • Add in the lime juice, simple syrup to taste, and champagne or soda water.
  • Stir the batch gently together. Fill 4 tall glasses with crushed ice. Pour the mixture evenly into each glass and garnish with mint and lime wedges. 

Notes

To make simple syrup: combine 1 cup water and 1 cup of sugar in a saucepan on low heat until all the sugar has dissolved and is clear. Cool and keep in a mason jar in the refrigerator for up to 3 weeks.
