This strawberry gin mojito is a floral, fruity, fizzy take on your classic mojito. Also known as a 'southside' cocktail, this drink swaps rum for gin and soda water for champagne. A refreshingly light cocktail to whip up on a warm afternoon.
In a large pitcher muddle together strawberries, mint leaves, and gin. Muddle together until most of the strawberries are crushed and their juices are released.
Add in the lime juice, simple syrup to taste, and champagne or soda water.
Stir the batch gently together. Fill 4 tall glasses with crushed ice. Pour the mixture evenly into each glass and garnish with mint and lime wedges.
Notes
To make simple syrup: combine 1 cup water and 1 cup of sugar in a saucepan on low heat until all the sugar has dissolved and is clear. Cool and keep in a mason jar in the refrigerator for up to 3 weeks.
