2 cups cooked quinoa
1 Cup of mozzarella balls
½ cucumber quartered
1 Cup grape tomatoes quartered
¼ cup slivered almonds
¼ cup balsamic vinaigrette
¼ cup of olive oil
3 Tablespoons of chiffonade basil
2 tablespoons of sun dried tomatoes diced
½ red onion diced
salt + pepper
1 Tablespoon of garlic minced
Stir all ingredients into a large bowl. Serve cold or at room temp. For a complete meal add grilled chicken or tofu.
