This queso is everything. It took all I could to not dive head first into it. If you’ve been to Torchy’s Tacos then you know how epic their queso is. This recipe was 100% inspired by Torchy’s queso and I won’t deny it. I would have never even thought to put a guacamole mound in the middle of a bowl of queso but man does it work or spicy sriracha on top but they layer as perfectly as pb&j. This queso was 100% boyfriend approved and perf for football season coming up said my official poison tester. Enjoy your ooey gooey cheesy madness! 

CLASSIC
WHITE QUESO

3/4 Lb. Fontina cheese
3/4 Lb. White American cheese
1 Cup of half & half
2 Tablespoons of minced garlic
1/2 Serrano pepper minced 
1/4 Teaspoon nutmeg
1/4 Teaspoon course salt
1/4 Teaspoon freshly cracked pepper

Toppings
1 Avocado mashed
1/2 Serrano pepper minced
1/4 Cup of finely chopped red onion
1/2 Teaspoon of kosher salt
Juice from half a lime
1/2 Cup of diced tomatoes
1/4 Cup freshly chopped cilantro
Serrano pepper slices
Sriracha  
+Blue corn chips for dipping

In a cast iron skillet or heavy bottom sauce pan bring half & half to a rolling simmer. Add in cheese in 1/4 cup batches and stir until melted after each addition. Continue until all cheese is melted in. Add in garlic, nutmeg, serrano, salt, and pepper. 

In a small bowl mash the avocado, serrano, red onion, and salt together. Add avocado into the middle of the queso. Top with sriracha drizzle, tomatoes, cilantro, serrano and serrano pepper slices.
