Buffalo Chicken Bites are a spicy, crunchy and incredibly saucy finger food to add some pizzazz to your party. Serve these boneless buffalo wings on Game Day, or any time you need a super easy appetizer.
2lbsbonelessskinless chicken breasts, cut into 1-inch pieces
¾cupall purpose flour
2large eggs
4cupspanko bread crumbs
1tspgarlic powder
1tspkosher salt
Cracked black pepper
½tspcayenne pepper
½tsppaprika
2tbspolive oil
1 ½cupsbuffalo wing sauce
1cupblue cheese dressing
¼cupblue cheese crumbles
Celery sticks for serving
Carrot sticks for serving
Instructions
Prep equipment: Preheat the oven to 400 F. Line a large baking sheet with parchment paper and set a baking rack on top.
Dredge chicken: In medium bowl mix together chicken breast pieces and all purpose flour until well coated.
Set up breading station: In a separate medium bowl whisk together eggs. In another separate large bowl, mix together panko bread crumbs, garlic powder, kosher salt, a few turns of fresh cracked black pepper, cayenne pepper, and paprika.
Coat chicken: Coat each piece of chicken into the egg mixture and then dip into the panko bread mixture, pressing the coating onto the chicken piece. Transfer the chicken bites onto the baking rack. Drizzle chicken pieces with olive oil.
Oven bake: Bake for 12 minutes. Turn each chicken piece after 12 minutes of cooking, so they brown evenly. Bake for an additional 12-15 minutes, or until the chicken reaches an internal temp of 165 and are golden brown on the outside.
Toss with buffalo sauce: Let chicken pieces cool and then toss in buffalo sauce, until well coated. Serve with a bowl of blue cheese dressing topped with blue cheese crumbles. Serve celery sticks and carrot sticks on the side.
