Baked, not fried! We are taking the easy route today by baking these buffalo chicken bites in the oven. Not only does this cut down on calories, but it makes the cooking process that much easier and enjoyable. I like to clean up and prep the vegetable sticks and dip while the oven does all the work for me.

One for the team! If there were ever a crowd pleasing appetizer, this one is it. Spicy, saucy, meaty, juicy — I don’t think I want anything else when it comes to Game Day food. Serve these for Superbowl — or any party that suits your fancy — for a poppable, craveable masterpiece.

Quick and easy! Once you have your breading station set-up (the usual flour, eggs, breadcrumbs), the rest is SO easy. By first dredging all the chicken first, then coating with the breadcrumbs and baking in the oven, you have a fast and simple approach to buffalo wing bitesoven style.

Ingredients

These buffalo bites require nothing more than chicken and a few pantry staples. We will need:

  • Chicken breasts
  • All purpose flour
  • Eggs
  • Panko breadcrumbs
  • Garlic powder
  • Salt + pepper
  • Cayenne pepper
  • Paprika
  • Olive oil
  • Buffalo wing sauce
  • Blue cheese dressing
  • Blue cheese crumbles
  • Celery sticks
  • Carrot sticks

Ingredient substitutions and notes:

  • Chicken: Look for plump chicken breasts, which will be easier to cut into cubes. You may need 3-4 chicken breasts, depending on size. Check the weight on the package.
  • Breadcrumbs: Panko breadcrumbs are super flaky and coarse Japanese style breadcrumbs that create so much texture. You could also try a mix of panko and regular bread crumbs.
  • Buffalo wing sauce: My favorite is Frank’s Red Hot Buffalo Wing Sauce, which is a little richer than regular buffalo sauce. Use whichever brand and / or flavor you prefer.

How to make

Boneless buffalo chicken bites take the classic approach with a full on breading station. Think of these like Tyson buffalo chicken bites — but 10x better! Here’s how to do it:

Prep equipment: Preheat the oven to 400 F. Line a large baking sheet with parchment paper and set a baking rack on top. 

Dredge chicken: In medium bowl mix together chicken breast pieces and all purpose flour until well coated. 

Set up breading station: In a separate medium bowl whisk together eggs. In another separate large bowl, mix together panko bread crumbs, garlic powder, kosher salt, a few turns of fresh cracked black pepper, cayenne pepper, and paprika. 

Coat chicken: Coat each piece of chicken into the egg mixture and then dip into the panko bread mixture, pressing the coating onto the chicken piece. Transfer the chicken bites onto the baking rack. Drizzle chicken pieces with olive oil.

Oven bake: Bake for 12 minutes. Turn each chicken piece after 12 minutes of cooking, so they brown evenly. Bake for an additional 12-15 minutes, or until the chicken reaches an internal temp of 165 and are golden brown on the outside. 

Toss with buffalo sauce: Let chicken pieces cool and then toss in buffalo sauce, until well coated. Serve with a bowl of blue cheese dressing topped with blue cheese crumbles. Serve celery sticks and carrot sticks on the side.

How to store & make ahead

Leftover buffalo bites will keep in an airtight container in the fridge for up to 4 days. Adding a piece of parchment paper helps trap any moisture.

Make Ahead Instructions: Prep and bake the chicken pieces 1-2 days in advance, then cool and store in the fridge. On serving day, reheat in a 350 degree oven for 10-15 minutes, then toss with the sauce. Tossing with the buffalo sauce at the last minute prevents the boneless bites from getting too soggy.

Recipe tips & notes:

  • Use a rack inside the baking sheet. This creates lift and proper air flow around the whole surface area of the chicken bites.
  • Gently press the coating into the chicken pieces. This ensures the seasoned breadcrumb mix sticks to the chicken.
  • Serve warm or room temperature. Once tossed with the sauce, you can keep the chicken wing bites warm in a low oven set to 200 degrees F until your guests arrive. But they are just as delicious at room temperature, too.

  • ¾ cup all purpose flour 
  • 2 large eggs
  • 4 cups panko bread crumbs 
  • 1 tsp garlic powder 
  • 1 tsp kosher salt 

Cracked black pepper

  • ½ tsp cayenne pepper
  • ½ tsp paprika
  • 2 tbsp olive oil
  • 1 ½ cups buffalo wing sauce
  • 1 cup blue cheese dressing
  • ¼ cup blue cheese crumbles
  • Celery sticks  for serving
  • Carrot sticks  for serving
