We’re taking iconic rice Krispies and marrying them with obscene amounts of rainbow sprinkles for quite possibly the cutest nostalgic dessert ever. Say hello to easy rice crispy treats with sprinkles. Gooey, marshmallow-y, and addicting.
Perfect for birthday celebrations, kid-friendly desserts and of course St. Patricks Day.
Happy Tuesday my friends!
Today I am bringing you quite possibly my most colorful recipe yet. I think these rice Krispie treats with sprinkles even rival my funfetti white chocolate blondies.
With St. Patricks day right around the corner, I wanted to make a dessert that felt very ‘leprechaun’ friendly.
These colorful rice krispie treats are also great for birthdays. They give off a birthday cake vibe that is undeniable and you can make them in a fraction of the time. Top each one with a candle and you’re good to go.
Be sure to save this recipe to have in your dessert arsenal when you need something quick, cute and tasty!
Ingredients for Rice Krispie Treats with Sprinkles:
- Unsalted butter: Salted or unsalted, use whatever you’ve got.
- Marshmallows: I used mini ones because they are way easier to melt. If you’re using large marshmallows, melt on low heat to avoid unnecessary burning.
- Salt: Balances out the sweetness from the marshmallows. If you’re using salted butter you can leave the extra salt out.
- Rice Krispies: Snap. Crackle. Pop. When I was a kid I loved my rice Krispies with lots of milk and a little sugar sprinkled on top, yum.
- Rainbow Sprinkles: Don’t be shy.
How to make Rice Krispie Treats with Sprinkles:
- Melt your butter & Marshmallows: In a large pot (I used a shallow braiser) melt down your butter. Add in the marshmallows and cook on medium-low heat until they are melted.
- Add in your Rice Krispies: Add in rice krispies and mix until they are incorporated.
- Sprinkles + Extra Marshmallows: Let the mixture cool ever so slightly (this will help the extra marshmallows and sprinkles from melting into the batter) and then add in the sprinkles and extra marshmallows.
- Mold your Rice Krispie Treats: Line a sheet pan or rectangle cake pan with parchment paper and spread out the rice krispie mixture evenly. Top with a bit more sprinkles and cool until hardened.
Tips for the BEST Rice Krispie Treats:
- Cook your marshmallows on low heat: This is a quick dessert, but fight the urge to cook your marshmallows on high heat. They burn extraordinarily fast!
- Don’t over stir the cereal: This can cause problems. Stir the cereal in until just combined, if you stir for two long things start to become cement-like and your cereal will start to break.
- When molding the marshmallows: Press them in with a silicone spatula or spray your hands with a little cooking spray to prevent sticking.
- Extra Marshmallows: My favorite kind of Rice Krispie treats have bites of extra whole marshmallows. Allow the mixture to cool slightly and then add in a bit more of whole marshmallows so they don’t melt into the matter.
Best way to Store Rice Krispie Treats:
- Don’t refrigerate them: Fight the urge. This is a sure-fire to make them hard enough to break a tooth. Let them harden at room temp just enough before cutting them into squares.
- Wrap them in plastic wrap or a seal tight Tupperware: After you’ve cut your rice Krispie treats, the best way to store them is in an airtight Tupperware and place a piece of parchment in between each layer to prevent them from sticking to each other.
- Keep for 3-4 days: The shelf life of a Rice Krispie treat isn’t too long, be sure to eat them within 3-4 days or storing them in an airtight container.
Rice Krispie Treats Variations:
- Try another cereal: If you’re in love with another cereal, swap it out with rice crispies. Fruity Pebbles will also give you an epic rainbow sprinkle look.
- Peanut Butter & Nutella: These are both great, easy mix in’s that significantly amp up the flavor.
- Chai or Pumpkin Spice: A perfect flavor change for those cozy fall months.
- Easy S’mores flavor: Add Graham Cracker crumbs and drizzle with chocolate.
- Candy: Add in a chopped up candy bar or something simple like Reese’s pieces for extra flavor.
- Mold them: Rice Krispie treats mold really easily. Try shaping them into little hearts or footballs for Superbowl. Just be sure to spray your hands with nonstick spray.
