This spring dessert is an Italian classic with a Japanese flare that comes together in less than 20 minutes. 

Say hello to a very spring dessert! 

When I think of spring dessert flavor combinations, matcha was one of the first things to come to mind!

Not only does this tiramisu boast a bright green color, but it also has a subtle earthy flavor. I promise you that this dessert still tastes very creamy and sweet but it gives off a ‘mother earth’ vibe that I love for spring!

If you’re in need of a great spring dessert for Easter or just need something green to ward people off on St. Patricks Day, this easy matcha tiramisu is it! 

What is Matcha?! 

Matcha is pretty much just ground up green tea leaves into a fine powder. There is more to it… but that is the base ingredient. The green tea leaves are grown in a special shaded location and have their veins and stem removed before being turned into the powder. Many people (millennials especially) have replaced their morning cup of coffee with a cup of matcha. 

Ingredients for matcha tiramisu: 

  • heavy whipping cream
  • mascarpone cheese
  • sugar
  • vanilla extract
  • salt
  • matcha powder
  • hot water
  • kalua or coffee liquor 
  • honey
  • ladyfingers

What are ladyfingers? 

This is going to sound funny but they sort of remind me of sweet Italian croutons…

Ladyfingers are basically a sweet, spongy, dry biscuit. They work great in recipes like tiramisu and trifles as they soak up mixtures well and give off a sweet cake texture once moistened. Oh, they’re also shaped like fingers… hence lady ‘fingers’.

 I found mine at Sprouts, but most grocery stores sell them in the bakery department. 

This tiramisu recipe has no eggs: 

Just say thank you, I promise. Unless you’ve got an extremely authentic Italian grandma coming over for dinner, don’t worry about making sure this Tiramisu is totally and completely authentic (i.e. with eggs). I promise you, even without the eggs, this recipe tastes like delicious tiramisu. 

You see, most traditional tiramisu recipes usually call for some kind of egg tempering, double boiling, etc, etc for the creamy custard filling. By cutting this step out, you will save yourself so. much. time. and I promise you will still achieve great texture and flavor for those creamy tiramisu layers. 

How to make Matcha Tiramisu:

  1. Make your matcha mixture: Whisk together your matcha powder with hot water, kalua and 1-2 tablespoons of honey if your matcha mixture is unsweetened. 
  2. Whip up the cream mixture: Beat whip cream, sugar, and vanilla until soft peaks form. Add in mascarpone, salt, and kalua until stiff, velvety peaks form. 
  3. Soak the first layer of ladyfingers: Soak your ladyfingers lightly into the matcha mixture and arrange in a casserole dish. I used this Staub casserole dish for mine, it’s on the smaller side. 
  4. Assemble the tiramisu: Add on a generous layer of your mascarpone cream mixture on top of the soaked ladyfingers, a light dusting of matcha, and continue with one more layer of soaked ladyfingers and finish with a cream layer. 
  5. Cover tiramisu: Cover well and refrigerate for 2-4 hours to let the flavors come together. 

This is a great make-ahead dessert: 

The great thing about tiramisu is that you can make this ahead and it only tastes better. It’s recommended that tiramisu soak together for at least a few hours. If you’re making this for dessert (it’s perfect for Easter or a sushi night!) just be sure to put a tight plastic wrap seal on top and refrigerate until serving.

ingredients
 

For lady fingers:

  • 2 cups hot water
  • 3-4 tablespoons of matcha powder +more for sifting on top 
  • 2 tablespoons kaluha
  • 1 tablespoon of honey optional

For cream filling:

  • 1 cup heavy whipping cream
  • 1 cup mascarpone cheese room temperature
  •  cup sugar
  • 1 teaspoon vanilla extract
  • pinch of salt 
  • 14 Ounces / 24 Lady Fingers

instructions
 

  • In a small bowl, whisk together hot water and matcha powder until smooth. If matcha powder is sweetened, forgo honey addition. If you're matcha powder is unsweetened add in 1-2 tablespoons of honey to sweeten the mixture. Stir in kaluha and let cool. 
  • With a stand or hand mixer begin to whip the heavy whipping cream on high until stiff peaks begin to form. Add in the mascarpone cheese and vanilla extract, salt and sugar. Whip until smooth.
  • Quickly submerge the lady fingers into the matcha mixture. Be careful not to oversaturate. Arrange them into an even layer in a casserole dish and sift with matcha powder. 
  • Spread an even layer of the cream mixture over the first layer of lady fingers and repeat process once more.
  • Sift over one last layer of matcha powder, cover tiramisu and refrigerate for 2-4 hours. If you're short on time, you can serve right away but the chill time will provide more depth and flavor.
