This creamy cauliflower gnocchi chicken soup is every bit creamy and flavorful, but, it’s also made low carb with Trader Joe’s cauliflower gnocchi.

I don’t normally post new recipes on a Sunday but seeing as these are unprecedented times, I think you NEED this creamy cauliflower gnocchi chicken soup recipe in your life. 

I’ve been making this on Instagram stories for a few weeks now and it’s about time for me to dish out this (insanely easy) healthy soup recipe. It takes less than 20 minutes to come together, 30 if you’ve had a glass of wine…

I have found myself seeking out simple comfort food as we try and navigate a new normal for ourselves. Anyone else doing the same?

Reason 20370935 why I love this soup recipe…

It’s VERY similar to Olive Garden’s Chicken Gnocchi soup but with a healthy revitalization.

I swapped out regular gnocchi for TJ’s cauliflower Gnocchi (you’d never even know!), used lots of chicken for added protein and added in a hearty dose of greens at the end so it felt well rounded.

If Trader Joe’s Cauliflower Gnocchi is a refrigerator staple in your house (we always have a couple of bags in the freezer) then I highly suggest giving this healthy soup recipe a go!

If you’re short on fresh herbs or don’t have any celery, feel free to improvise. These are crazy times and I think one thing we can all promote right now is to do what you can, with what you have. 

Use dried oregano, instead of fresh thyme.

Use veggie stock, if you don’t have chicken stock. 

Use regular gnocchi, (just cook it longer) instead of cauliflower gnocchi.

Top with any kind of cheese, if you don’t have parm.

This is a very forgiving recipe, and that is what we need in life right now.

 How do you cook Trader Joe’s Cauliflower Gnocchi?

The best way I have found to cook Trader Joes Cauliflower Gnocchi is in a medium saute pan with a drizzle of olive oil for 7-8 minutes.

The bag directions tell you to use a bit of water, cover it, blah blah blah but I think this method makes them taste very gummy and brings out way too much of the cauliflower that can be disguised by cooking it this way. 

For the soup recipe today we are adding in the frozen cauliflower directly to the simmering soup broth and the cauliflower taste is hardly even noticeable. 

 

Ingredients for Creamy Cauliflower Gnocchi Chicken Soup:

  • olive oil
  • carrots
  • celery
  • onion
  • salt
  • cracked black pepper
  • garlic –(granulated is okay too!)
  • chicken
  • thyme –(dried is an okay substitute)
  • chicken stock
  • Trader Joe’s cauliflower gnocchi
  • half and half 
  • spinach –(any green will do!)
  • parmesan cheese –(or any cheese for topping!)

How to make Creamy Cauliflower Gnocchi Chicken Soup: 

  1. Heat olive oil on medium heat in a large dutch oven or stockpot.
  2. Add in carrots, celery, and onion and season with salt and pepper. Cook for 3-4 minutes or until onions are translucent. Add in garlic and cook for 1-2 more minutes or until fragrant.
  3. Add cooked chicken, fresh thyme leaves and chicken stock. Season once more with salt and pepper and bring mixture to a strong simmer.
  4. Add cauliflower gnocchi to stock and cook for 2-3 minutes.
  5. Add half and half and spinach to the soup. Stir well and let cook for an additional 3-4 minutes. Taste test for salt and pepper seasoning. Serve right away and top with plenty of parmesan cheese.

ingredients
 

  • 2 tbsp olive oil
  • 3 carrots peeled and diced
  • 3 celery stalks diced
  • ½ white or yellow onion diced
  • 3 garlic cloves minced
  • 2 cups chicken cooked and diced (rotisserie, leftovers, anything will do!)
  • 2 tsp fresh thyme leaves
  • 1 quart / 4 cups chicken stock
  • 1 bag Trader Joe's cauliflower gnocchi
  • 1 cup half and half
  • 2 large handfuls of fresh spinach
  • Parmesan cheese for topping

instructions
 

  • 1. Heat olive oil on medium heat in a large dutch oven or stock pot.
  •  
  • 2. Add in carrots, celery, and onion and season with salt and pepper. Cook for 5-6 minutes or until onions are translucent. Add in garlic and cook for 1-2 mores minutes or until fragrant.
  •  
  • 3. Add cooked chicken, fresh thyme leaves and chicken stock. Season once more with salt and pepper, stir and bring mixture to a strong simmer.
  •  
  • 4. Add cauliflower gnocchi to stock and cook for 2-3 minutes.
  •  
  • 5. Add half and half and spinach to soup. Stir well and let cook for an additional 3-4 minutes. Taste test for salt and pepper seasoning. Serve right away and top with plenty of parmesan cheese.

notes

  • Don't leave the gnocchi simmering longer than needed, it can loose its shape and become a bit gummy. 
  • If you're in a pinch for certain ingredients like fresh herbs, dried works just as well just add a little less. 
  • Any kind of greens, or no greens at all will work at the end of the recipe.

    First, thanks for posting. I love making the Olive Garden copy-cat, and have been wondering if the frozen cauliflower gnocchis would work! You do mention not to let them simmer too long, which makes me concerned they won’t really hold up in the soup. I like to let mine simmer all day and let the regular gnocchis soak up all the flavor of the pot, not to mention I’ll eat the same soup leftovers for days. What is your experience with the cauliflower gnocchis? Do they just get a little gummy or do they fall apart?
    Also, just FYI, there is a really annoying little black pop-up box that is blocking half of the words I’m trying to read on your webpage. It’s a failed ad that says “This video cannot be played because of a technical error. Error Code 102006).”
    I don’t mind ads when I can click out of them but this one has no x to close it out. Just thought you should know.
