Cucumber Mojito

This refreshing Cucumber Mojito is a delightfully tasty and simple cocktail you’ll want to sip all summer long! Muddle some cucumber with your mint and add white rum, lime juice, simple syrup, and club soda. Now kick your feet up and relax!

Ingredients

  • 5-6 fresh mint leaves
  • ½ persian cucumber sliced
  • 2 oz white rum
  • 1 oz fresh lime juice
  • ½ oz simple syrup
  • Club Soda to top

Instructions

  • To a cocktail shaker add mint leaves and cucumber slices. Lightly muddle together to release their juices. Add the rum, lime juice, simple syrup and a scoop of ice.
  • Shake the cocktail for 10-20 seconds or until the outside of the shaker is very cold.
  • Strain into a highball glass filled with ice and top the remainder of the glass with club soda. Garnish with lime slices, cucumber slices and fresh mint.
