They’re so light and refreshing as is, but since you all loved how soothing my cucumber spa martini was, I added muddled cucumber to give it an extra burst of fresh flavor. I don’t know if there’s ever been a summer cocktail that goes down as easily as cucumber mojitos! 

This recipe is also so easy to make. Since there are only 6 ingredients in all, this mojito is all about quality and freshness. Fresh lime juice, mint leaves, and cucumber are the stars of this show. 

And to make it, all you have to do is muddle and shake! In no time at all you’ll be sipping this minty mojito and asking yourself how soon you can make another one. 

Ingredients

You’re going to love making these cucumber mojitos because there’s not much to them! Just make sure you have fresh mint leaves, limes, and Persian cucumbers on hand. I typically use Persian because they’re a little less watery and have a stronger flavor. Other than that, here’s your simple list of ingredients: 

  • Mint leaves
  • Persian cucumber 
  • White rum
  • Fresh lime juice
  • Simple syrup
  • Club soda

How To Make a Cucumber Mojito

Step 1: Muddle

Add mint leaves and cucumber slices to your cocktail shaker, then lightly muddle them together to release their juices and flavor. Add rum, lime juice, simple syrup, and a scoop of ice.

Step 2: Shake

Shake the cocktail for 10-20 seconds, or until the outside of the shaker is very cold. 

Add the mixture to the shaker and shake with ice until very cold

Step 3: Strain

Strain the drink into a highball glass filled with ice. Top the remainder of the glass with club soda and garnish with lime slices, cucumber slices, and fresh mint.

What liquor is best for a mojito?

The classic liquor for a mojito – and the best! – is rum. Rum emphasizes the flavors of the mojito and gives it a tropical twist. If you prefer, you can make vodka or gin mojitos. Just keep in mind they won’t have the classic mojito flavor we all love.

Should I muddle mint or shake it?

Mint can be easily bruised which makes the flavor bitter, so you have to be careful with it! I prefer muddling it gently, but you can also shake it with the rest of the ingredients to release the flavor. 

What makes a virgin mojito?

Virgin mojitos are so popular because they’re easy to make and they’re so light and refreshing. Just mix all of the ingredients without the rum. Simple!

Serving Suggestions

These mojitos have such a light and almost neutral flavor that you can pair them with any sort of food menu, but to start, I think these salty and sweet prosciutto melon skewers would be a great appetizer option. If you’re looking for even bolder flavors, try this hot honey whipped ricotta dip!

As for your main course, try something herbaceous like orzo pesto salad, or full of bright citrus flavor like creamy lemon pasta

  • 5-6 fresh mint leaves
  • ½ persian cucumber sliced
  • 2 oz white rum
  • 1 oz fresh lime juice
  • ½ oz simple syrup
  • Club Soda to top

  • To a cocktail shaker add mint leaves and cucumber slices. Lightly muddle together to release their juices. Add the rum, lime juice, simple syrup and a scoop of ice.
  • Shake the cocktail for 10-20 seconds or until the outside of the shaker is very cold.
  • Strain into a highball glass filled with ice and top the remainder of the glass with club soda. Garnish with lime slices, cucumber slices and fresh mint.
