As soon as April Fools day has past, the chatter of The Masters is hot in our house. I’ve learned everything I know about golf from the Happy Gilmore movie, but my bf is a mega golf fanatic. His birthday usually falls on or right around Masters Sunday so it’s a whole event over here.

This year I thought I would make the whole weekend a little sweeter with homemade pimento cheese sandwiches and the signature Azalea cocktail served at the tournament (for only $1.50!).

If you didn’t know, The Masters are one of the four major golf tournaments of the year and are extremely hard to get tickets to (like Taylor Swift Era’s tour level of hard), so I thought we could bring the Masters home to us.

This pimento cheese mixture is made with flavorful sharp cheddar cheese, classic sweet pimento peppers and a couple different spices for a strong, tangy flavor.

Whether you’re hosting a Masters themed party (you’ll need these green checkered liners!) or just need a quick appetizer for a daytime party, this pimento cheese sandwich recipe is a breeze to make! The dip is made in just one bowl (that can be made ahead of time!) and spread on the bread before serving

You can serve this dip with crackers or crudite (I like to top mine with fresh chives!) and have your guests self serve or serve them up as the classic sandwich

What is pimento cheese?

Pimento cheese is a popular Southern dip/dish often seen at picnics, parties, and of course The Masters. It’s a creamy, fluffy blend of sharp cheddar cheese, sweet pimento peppers, mayonnaise, cream cheese and spices. There are many uses for pimento cheese appetizers. It has a similar consistency as whipped cream cheese so you can serve it as is for dipping or a spread. You can even try it on a hamburger or use it in a pimento cheese grilled cheese (yum!).

ingredients for a pimento cheese sandwich:

  • Extra sharp cheddar cheese– extra sharp cheddar will give you the best, strongest flavor! Shred it yourself on the fine cheese grating side for an extra creamy texture
  • Cream cheese– at room temp to incorporate easily
  • Mayo– I used kewpie mayo for extra creaminess but you can use regular
  • Jar of diced pimentos– you can find these in the olive section of the grocery store
  • Onion and garlic powder– for deeper flavor
  • Cayenne– for a little kick, you can leave it out if you don’t like things spicy
  • Kosher salt
  • Cracked black pepper 
  • Sliced white bread– grab a nice fluffy loaf!
  • Cornichon– I garnished each pimento cheese sandwich top with a cornichon, you could do an olive too!

How to make:

  1. Make the cheese mixture: In a medium mixing bowl add finely shredded cheddar cheese, cream cheese, mayo, drained pimento peppers, onion powder, garlic powder, a pinch of cayenne, kosher salt, cracked black pepper. Mix together until smooth and creamy. Taste test for salt and pepper.

  1. Spread onto sandwich: Spread a few tablespoons onto one slice of white bread. Top with the other half and cut in a diagonal.
  2. Serve: Garnish the tops with a cornichon on a toothpick through the sandwich top.

Can you freeze pimento cheese?

You can technically freeze pimento cheese but disclaimer it can cause the texture to change. Be sure to put it in an air tight container and thaw it out in the refrigerator slowly overnight. The texture may become a little water from the peppers and grainy. I would suggest trying to incorporate it into leftover’s the next day.

pimento cheese with jalapeños

If you love a little heat, pimento cheese with jalapeños is delicious! Chop up a jalapeño very finely and mix it in with the pimentos. A spicy jalapeño pimento cheese with a spicy margarita sounds like a great combo!

add a little bacon!

Some chopped up bacon pieces would be delish in this dip. Be sure to give it a taste test before adding in any extra salt as the saltiness from the bacon might be sufficient!

Spread a little butter on the outside of the bread slices. Add the pimento cheese mixture and sandwich your bread slices together. Brown in a hot pan for 2-3 minutes on each side for a nice golden brown pimento cheese grilled cheese

what to serve with these sandwiches:

  • An Azalea cocktail is a must serve if you’re having a Masters viewing party! It’s the signature drink served at the golf tournament
  • For a mocktail similar to the Azalea, you could do a strawberry basil lemonade!
  • Having a hot dog is a classic golf course snack, you could pair this pimento cheese sandwhich with a batch of pigs in a blanket for a fun appetizer spread!

  • 8 oz cream cheese at room temp
  • ½ cup mayonnaise I used kewpie
  • 4 oz diced pimentos drained
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • Pinch of cayenne optional
  • Kosher salt
  • Cracked black pepper
  • 16 slices white bread
  • cornichons for garnish

  • Make the cheese mixture: In a medium mixing bowl add finely shredded cheddar cheese, cream cheese, mayo, drained pimento peppers, onion powder, garlic powder, a pinch of cayenne, pinch of kosher salt, a few turns of freshly cracked black pepper.
