These saucy bbq chicken nachos are my go-to recipe when I need a quick appetizer to serve for game day. They take less than 20 minutes to make, are a real crowd pleaser and taste like nachos out of your favorites sports bar.

  • Made with rotisserie chicken: my secret trick for super speedy nachos is using a small container of pulled rotisserie chicken (I get mine from Albertsons) or about a 1lb of any pulled rotisserie chicken.
  • Quick recipe: you’ll have nachos on the table in less than 25 minutes! While the cheese is melting in the oven, prep all of your fresh toppings (cilantro, onions, jalapenos, avocado, etc) and everything will be ready right on time.

Saucy Bbq Chicken Nachos

This thick platter of nachos is baked with juicy pulled bbq chicken, beans, and melthy cheddar cheese. Topped with an array of fresh toppings like cilantro, jalapenos, onions and avocado and more bbq sauce!

ingredients
 

  • 10 oz tortilla chips
  • 2 cups freshly shredded cheddar cheese
  • 1 can black beans drained
  • 1 lb shredded rotisserie chicken
  • 1 cup bbq sauce + more for topping
  • ½ avocado diced
  • ¼ red onion finely diced
  • ¼ cup green onions finely diced
  • ½ cup cilantro chopped
  • 1 jalapeno thinly sliced
  • sour cream for topping

instructions
 

  • Preheat oven to 425 F
  • On a rimmed baking sheet, arrange the tortilla chips in an even layer. Top chips evenly with shredded cheese and black beans.
  • In a medium bowl, mix together shredded chicken breast and 1 cup of bbq sauce until evenly coated. Top chips with bbq chicken and bake for 10-15 minutes, or until the cheese is bubbling and melted.
  • Drizzle a bit more bbq sauce on top of nachos. Garnish nachos with avocado, red onion, green onions, cilantro, and jalapeno. Top with sour cream in 4-5 dollops and serve right away.
