It’s time for another Dinner and a Movie, except this time it’s dessert and a movie! Enjoy the iconic Princess Diaries Pear Sorbet – hopefully without the brain freeze! This creamy and smooth sorbet treat is full of pear flavor with refreshing hints of mint. This is a fabulous palate cleanser for the likes of Princess Mia, kids on a hot summer day, and you when it’s time to cuddle on the couch for a movie!

I think we’ve all experienced a brain freeze, but no one has experienced it quite as severely as Princess Mia (of Princess Diaries fame, of course) as she took a massive bite of green pear sorbet. I can hear the panicked grunts of Mia and the Prime Minister and his wife as they took too-big bites in solidarity.
It’s one of the most iconic scenes in the movie because it’s so funny, but it stuck in my brain specifically because…doesn’t that pear sorbet look so dang good?! The vibrant green color, and the fact that it’s meant to cleanse the palate between courses, it all seems so appealing to me!
And I mean, who can deny Genovian pears? They’re a delicacy! 😉This sorbet has a strong pear flavor with a hint of fresh mint which makes it light and refreshing. You can enjoy it between courses as a palate cleanser like a true Genovian, or you can enjoy it as an after dinner sweet!
You could even pair it with a greasy corndog like Mia would – I’ve made a little Princess Diaries Menu so you can throw a full-on themed party as a princess yourself! You’ll have no choice but to say, “Me? A…princess? Shut…up!”

Sorbet Ingredients
Sorbet is made of simple ingredients, and it’s customizable! If you’d like more minty flavor, go ahead and add more leaves. If you want your sorbet to have a pear and ginger flavor profile, sounds good to me! Below are the ingredients I used to make – what I think – is the most authentic Genovian Pear Sorbet. The mint is great for “between courses, to cleanse the palate!”
- Apple juice
- Pears – peeled, cored and diced
- Fresh lemon juice
- Agave
- Mint leaves
- Green food coloring – optional
How to Make Palate Cleansing Sorbet
Step 1: Combine Juice + Pears
Place the apple juice in a medium sauce pan bring it to a near simmer, then add in the diced pears. Let it simmer for 8-10 minutes longer, or until the pears are fork tender.
Step 2: Add Ingredients + Cool
Remove the pear mixture from heat and add in the lemon juice, agave, and mint leaves. Stir everything together and let the mixture cool for 15-20 minutes. Remove the mint leaves from the mixture.
Step 3: Blend
Blend the mixture with an immersion blender, or in a blender for 20-30 seconds until the mixture is smooth. Add in a few drops of green food coloring and stir it together until everything’s combined.
Step 4: Freeze
Transfer the mixture to a container and put it in the freezer for at least 3 hours, or overnight. Or, transfer the mixture to an ice cream maker and follow your manufacturers instructions. Transfer the sorbet to a container and freeze for two hours for the ‘packed’ ice cream consistency.
