Ingredients

  • 1 cup apple juice
  • 4 large ripe pears peeled, cored and diced
  • 2 tsp fresh lemon juice
  • ¼ cup agave
  • 6 fresh mint leaves
  • Green food coloring optional

Instructions

  • Place the apple juice in a medium sauce pan. Bring to a simmer and add in diced pears and simmer for 8-10 minutes or until the pears are forked tender.
  • Remove pears from heat and add in lemon juice, agave, and mint leaves. Stir together and let the mixture cool for 15-20 minutes. Remove the mint leaves from the mixture.
  • Blend the mixture with an immersion blender or in a blender for 20-30 seconds until the mixture is smooth. Add in a few drops of green food coloring and stir together until combined.
  • Transfer mixture to a container and freeze in the freezer for at least 3 hours or overnight. Or transfer mixture to an ice cream maker and follow the manufacturer's instructions. Transfer to a container and freeze for two hours for ‘packed’ ice cream consistency.

Notes

Note: The sorbet will keep in the freezer for about a month when stored in an airtight container.
