This fizzy, refreshing, strawberry gin mojito is perfect for sipping on a warm summer day.

These mojitos come together very quickly (like less than 5 minutes!) and are made with fresh ingredients like mint, strawberries, and lime juice.

To make these light on the calories consider swapping the champagne for soda water and omitting the simple syrup!

Known as the Southside Cocktail:

This special gin mojito is a version of the classic (made with rum). It’s rumored to have started way back during prohibition. The anatomy of the drink is quite similar to a regular mojito, but it’s made with peppery gin and topped off with champagne instead of soda water.

Truthfully, I think it boasts WAY more flavor than a regular mojito but it might be because I’m one huge champagne lover!

I added in the strawberries for a bit of freshness and seasonal flare.

Ingredients for Strawberry Gin Mojitos:

  • fresh strawberries
  • fresh mint leaves
  • gin (I like Hendricks or Bombay)
  • fresh lime juice
  • simple syrup (optional)
  • champagne or soda water

Step by step process on how to make strawberry gin mojitos.

How to make these mojitos: 

  1. In a large pitcher muddle together strawberries, mint leaves, and gin.
  2. Muddle together until most of the strawberries are crushed and their juices are released. 
  3. Add in the lime juice, simple syrup to taste, and champagne or soda water.
  4. Stir the batch gently together. Fill 4 tall glasses with crushed ice. Pour the mixture evenly into each glass and garnish with mint and lime wedges. 

Do I have to use champagne?

No! You don’t have to use champagne it’s just traditional in this type of ‘southside’ mojito. You can use any kind of sparkling or soda water as a regular mojito uses.

  • 12 whole fresh strawberries 
  • A handful of fresh mint leaves 
  • 8 ounces gin I like Hendricks 
  • 4 ounces fresh lime juice 
  • ¼ cup simple syrup optional
  • 3 cups champagne 750 ml bottle or soda water

Garnish:

  • Lime wedges
  • Mint leaves
  • Strawberries

To make simple syrup: combine 1 cup water and 1 cup of sugar in a saucepan on low heat until all the sugar has dissolved and is clear. Cool and keep in a mason jar in the refrigerator for up to 3 weeks.
