This Matcha Chia Seed Pudding is the best make-ahead breakfast to get you moving in the morning! The matcha will give you a boost of caffeine, while the chia seeds pack a bunch of fiber that’ll keep you full and get your digestion rolling. Enjoy this creamy, dreamy, overnight pudding to get your day started right!
In a large bowl mix together matcha powder, milk, vanilla extract, and 1 tablespoon of maple syrup until smooth and matcha is incorporated.
Add the chia seeds and mix together until smooth. Taste test the liquid for sweetness and adjust 1/2 tablespoon at a time. Cover and refrigerate for a minimum of two hours or overnight.
Top with fresh fruit, bananas, granola and extra maple syrup if desired.

Store this matcha chia seed pudding in an airtight container(s) for 4 days in the refrigerator. Don’t add the toppings until you’re ready to enjoy!
