The matcha will give you a boost of caffeine, while the chia seeds pack a bunch of fiber that’ll keep you full and get your digestion rolling. Ingredients

  • 2 tsp matcha powder 
  • 1 ½ cups milk almond, coconut, or dairy 
  • ¼ tsp vanilla extract 
  • 1-2 tbsp pure maple syrup 
  • ½ cup chia seeds

Instructions

  • In a large bowl mix together matcha powder, milk, vanilla extract, and 1 tablespoon of maple syrup until smooth and matcha is incorporated. 
  • Add the chia seeds and mix together until smooth. Taste test the liquid for sweetness and adjust 1/2 tablespoon at a time. Cover and refrigerate for a minimum of two hours or overnight. 
  • Top with fresh fruit, bananas, granola and extra maple syrup if desired.

Notes

Store this matcha chia seed pudding in an airtight container(s) for 4 days in the refrigerator. Don’t add the toppings until you’re ready to enjoy!
