  • Matcha Powder
  • Milk (Almond, coconut, or dairy)
  • Vanilla Extract
  • Pure Maple Syrup
  • Chia Seeds

Ingredient Additions and Variations

In a large bowl, add the matcha powder, milk, vanilla extract, and maple syrup. Mix everything together until it’s smooth and the matcha is fully incorporated.

Add the chia seeds and mix them with the matcha liquid until it’s smooth. Taste test to see if you need to add more sweetener, and adjust ½ a tablespoon at a time. Cover and refrigerate your pudding for a minimum of 2 hours, but ideally overnight.

    • You can blend your pudding to break down the chia seeds even more. I also suggest using this pudding as an ingredient in other things, like maybe a parfait, so you can combine the pudding with other textures. 
  • Use the right matcha!
    • There are different grades of matcha: ingredient, culinary, and ceremonial. I would suggest using culinary or ceremonial-grade matcha for this recipe since you’re eating it in a more pure form. 
  • Mix, mix, mix!
    • Make sure you stir up your pudding well and good at the beginning, middle, and end of the recipe. The matcha needs to be well incorporated, and then the chia seeds need to be well soaked in the liquid, and then you need to mix it all up again before eating. The seeds can clump together, so you can give the pudding a good stir or shake every once in a while to help them distribute more evenly.

  • 2 tsp matcha powder 
  • 1 ½ cups milk almond, coconut, or dairy 
  • ¼ tsp vanilla extract 
  • 1-2 tbsp pure maple syrup 
  • ½ cup chia seeds

instructions
 

  • In a large bowl mix together matcha powder, milk, vanilla extract, and 1 tablespoon of maple syrup until smooth and matcha is incorporated. 
  • Add the chia seeds and mix together until smooth. Taste test the liquid for sweetness and adjust 1/2 tablespoon at a time. Cover and refrigerate for a minimum of two hours or overnight. 
  • Top with fresh fruit, bananas, granola and extra maple syrup if desired.
