Why you’ll love blueberry chia seed pudding

A nutrient powerhouse! If there was ever a way to get a TON of nutrients packed into one, delicious meal, this would be it. You get plenty of antioxidants from the blueberries and healthy fats and fiber from chia seeds. Plus, depending on your toppings of choice – hello, hemp seeds and nuts – you get another boost of plant-based protein.

Low-carb, grain-free, gluten-free! I like to think of this blueberry pudding as the low-carb and grain-free version of overnight breakfast treats like peanut butter, apple pie or pumpkin overnight oats. It’s great for those following a paleo diet and I have some ingredient swaps to make it keto.

Go wild with the toppings! I encourage you to get creative here and top it with whatever toppings you have on hand. I take a little inspiration from my favorite playa bowl spot and top it with an abundance of hemp seeds, almonds, walnuts, pecans, more honey, almond butter or whatever I am craving that day.

Ingredients

All it takes is 5 simple ingredients – along with a few extra seedy toppings – to make this blueberry pudding in a flash.

  • Blueberries
  • Almond milk
  • Vanilla extract
  • Honey
  • Chia seeds

Ingredient substitutions and notes:

  • Fresh or frozen blueberries can be used – no need to thaw!
  • I love unsweetened vanilla almond milk, but feel free to use your favorite plant-based milk such as cashew or coconut milk. Oat milk is another great option, if not paleo.
  • Replace the honey with maple syrup or agave to make it vegan.

How to make

This blueberry almond chia pudding is as easy as 1, 2, 3…

  1. Blend: Add blueberries, almond milk, vanilla extract, and honey to a food processor or blender. Blend until the mixture has pureed and is smooth, about 15-20 seconds. 
  2. Stir in chia seeds: Combine the blended blueberry milk mixture and chia seeds together in a bowl. Let the mixture sit for ten minutes or so and then stir together. Cover with plastic wrap or transfer evenly into 4 small jars. 
  3. Chill, swirl, top and serve: Refrigerate pudding for a minimum of four hours or best overnight. Stir together before serving and top with more blueberries, hemp seeds, chia seeds, honey and nut of choice.

Serving suggestions

I love to make a big batch of this at the beginning of the week and then scoop it into bowls or jars to enjoy for breakfast. You can either:

  • Smoothie Bowl: Cover the entire batch with plastic and enjoy it as a larger smoothie bowl for two.
  • Small Jars: Portion it out into 4 small mason jars and seal tight with the lid.

Try a variation

Blueberries and chia seeds are wonderful together, but here are some of my favorite variations:

  • Lemon: Add 1-2 tablespoons lemon zest into the bowl when you add the chia seeds.
  • Mixed Berry: Swap out the blueberries for an equal amount of mixed berries, like strawberries, raspberries and blackberries.
  • Banana: Mashed banana can also be used in place of the blueberries.
  • Keto: Substitute heavy cream to increase the fat and omit the honey or use an approved keto sweetener.

Recipe tips:

  • If you don’t like the texture of chia seeds, you can blend them along with the blueberry almond mix. The mixture will be super thick and gel-like, but taste just the same.
  • Mix the pudding one more time before placing it in the fridge to ensure no clumps stick to the bottom.
  • Turn it into a fun dessert parfait – create alternating layers of the chia pudding and fresh berries and top with a dollop of yogurt or freshly whipped coconut cream!
