Add water and sugar to a small sauce pot. Heat the mixture in medium- low heat, whisk together until the sugar has dissolved and the mixture is clear. Remove from the heat.

Pour water/sugar mixture into a large glass bowl or measuring glass.

Stir in the gelatin powder until dissolved. Add in passion fruit puree and blanco tequila and stir together.

Pour the mixture into small jello cups or into the passion fruit halves. Place into the refrigerator for 2 hours or until jello shots are set.

Optional: garnish with a sprinkle of tajin before serving.
