This gorgeous Peach Burrata Salad is about as summery as it gets! These fresh peaches, creamy burrata, juicy tomatoes, and flavorful vinaigrette will light up your taste buds. Ingredients
For the vinaigrette:
⅓cupolive oil + more for drizzle
2tbspchampagne vinegar
1tbsphoney
½jalapenothinly sliced
For the salad:
2cupsarugulaslightly torn
3ripe peachescut into slices
1cuphalved cherry tomatoes
½cupbasil leavesvery thinly sliced + extra for garnish
¼cuppistachiosroughly chopped
3ouncesprosciutto ribbons cut into small pieces
1-2burrata balls torn into pieces
Kosher saltto taste
Cracked black pepperto taste
Instructions
In a large serving bowl add ⅓ cup olive oil, champagne vinegar, honey, and jalapeno slices. Whisk together until combined.
Add arugula, peach slices, basil and cherry tomato halves to the vinaigrette. Toss together until evenly combined. Season with cracked black pepper and coarse kosher salt.
To the top of the salad add pistachios and prosciutto ribbons evenly. Tear open the ball of burrata and dollop on top of the salad evenly. Drizzle salad with a light drizzle of olive oil and another light seasoning of cracked black pepper and salt.
Serve on it’s own as a side or with bread as an appetizer.
Notes
If you want to get fancy with your salad and enhance your flavors a little bit, throw your peach slices on the grill for a few minutes on each side. I love the sound of a grilled peach and burrata salad!
