How To Make Tomato, Peach, and Burrata Salad
Step 1: Whisk Dressing
In a large serving bowl, add the olive oil, champagne vinegar, honey, and jalapeno slices. Whisk them together until they’re combined.
Step 2: Toss Vinaigrette
Add arugula, peach slices, basil, and cherry tomato halves to the vinaigrette. Toss everything together until it’s evenly combined. Season this mixture with cracked black pepper and coarse kosher salt.
Step 3: Add Burrata and Toppings
Add pistachios and prosciutto ribbons to the top of the salad. Tear open the ball of burrata and add dollops to the top of the salad evenly. Lightly drizzle the salad with olive oil and another light seasoning of cracked black pepper and salt.

No, don’t heat up your burrata! It’s best enjoyed at room temperature, so I would suggest leaving it on the counter while you chop and prepare your other ingredients before adding it to your salad.
Do you eat burrata skin?
You sure do – the burrata skin is literally just yummy mozzarella cheese! The inside of the burrata is full of stringy cheese mixed with decadent cream. You can (and should!) eat both parts.
Should I remove the peach skin?
This is totally up to you! Some people like leaving the peach skin on for appearance and texture, and some people prefer to peel the peach so each slice is completely smooth.

ingredients
- For the vinaigrette:
- ⅓ cup olive oil + more for drizzle
- 2 tbsp champagne vinegar
- 1 tbsp honey
- ½ jalapeno thinly sliced
For the salad:
- 2 cups arugula slightly torn
- 3 ripe peaches cut into slices
- 1 cup halved cherry tomatoes
- ½ cup basil leaves very thinly sliced + extra for garnish
- ¼ cup pistachios roughly chopped
- 3 ounces prosciutto ribbons cut into small pieces
- 1-2 burrata balls torn into pieces
- Kosher salt to taste
- Cracked black pepper to taste
instructions
- In a large serving bowl add ⅓ cup olive oil, champagne vinegar, honey, and jalapeno slices. Whisk together until combined.
- Add arugula, peach slices, basil and cherry tomato halves to the vinaigrette. Toss together until evenly combined. Season with cracked black pepper and coarse kosher salt.
