This delicious Kale Caesar Chopped Salad is my absolute favorite way to eat a Caesar salad. Made with classic ingredients like crisp romaine and kale lettuce, nutty Parmesan and creamy caesar dressing. I put my own healthy twist topping it off with juicy cherry tomatoes, crunchy pistachios and seared ahi tuna for extra protein.

This hearty salad is perfect for lunch or dinner. 

I could seriously eat this salad every day of the week and not get sick of it. It’s perfectly balanced, SUPER flavorful and healthy. 

One of my all time favorite kale caesar chopped salads is made at a restaurant called ‘Yard House‘. The first time I tried it I went back three times in the same week for this glorious healthy meal.

Since then I’ve been recreating it at home for a fraction of the price and with extra pistachios with no up-charge #score. 

I’m using Taylor Farms Kale Caesar Chopped Kit as my base because it’s the perfect foundation and has all the same ingredients I normally use to start this master piece of a salad.

Their kit includes romaine and kale lettuce, Parmesan cheese, creamy caesar dressing and the most delicious garlic romano crumble croutons. I love the croutons that are included because they’re chopped up real small and you get a little crunch in every single bite rather than a bit honker of a crouton. 

What other ingredients did I add in?!

Bright and juicy tomatoes, sweet golden raisins, pistachios and a gorgeous seared ahi tuna steak. I’m telling you this is the perfect blend of sweet, fresh, crunchy and flavorful in every single heathy bite.

How to make a Kale Caesar Chopped Salad:

  1. Sear your ahi tuna steak: Blot dry your ahi tuna steak. Brush on an even layer of olive oil and season well with salt and pepper. Heat a medium sized heavy bottom skillet on medium-high heat. Sear ahi tuna steak for 1-2 minutes on each side. Cover with foil and let rest for 3 minutes.
  2. Assemble your salad kit on a large plate or bowl.
  3. Top salad with mini cherry tomatoes, golden raisins, and pistachios. 
  4. Slice seared ahi tuna steak and top on salad before serving. 

 

Where do I get an ahi tuna steak?

You can find an ahi tuna steak at most local grocery stores but definitely at a more natural grocer like Whole Foods or Sprouts. Be sure to cook it within a day or two of purchasing! 

What other protein can I top this salad off with?

My favorite is a seared ahi tuna steak but you could also do a pan seared filet of salmon or a grilled chicken breast for some great, lighter protein.

  • 2 tsp olive oil
  • Kosher Salt
  • Ground Black Pepper
  • ½ cup cherry tomatoes halved
  • ¼ cup shelled pistachios
  • ¼ cup golden raisins
