Fruity and fabulous! Veggie salsas are great, but sometimes I want something with a bit more dimension and sweet flavor. Enter this mango pineapple salsa recipe. It’s fruity and delicious and ready in 5 minutes!

A fun, summery salsa twist! Nothing says summer to me than a bowlful of fresh fruit. And when I can make an excuse to have a marg or tequila sour right alongside, that’s good enough for me. Pineapple and mango celebrate summer, while the jalapeno, onion and bell pepper round it out to make it feel like a savory salsa.

Keeps for days! Fresh salsa requires a few minutes spent prepping and chopping the fruit and vegetables, so I need to make sure my efforts are well worth it. This mango pineapple salsa will keep for days stored in the fridge. But I can assure you, it probably won’t last that long!

Ingredients

This is a short list of only 8 ingredients, all easily available in the produce section of grocery stores. We will need:

  • Pineapple
  • Mango
  • Red onion
  • Jalapeno
  • Cilantro
  • Red bell pepper
  • Lime juice
  • Salt

Ingredient substitutions and notes:

  • Red onion is a bit sweeter, but you can use a few small shallots or sweet white onion in its place.
  • Keep the seeds and ribs of the jalapeno intact for a spicier salsa. More seeds = more spice!
  • Swap out the jalapeno for serrano, Fresno or habanero chile instead.
  • Cilantro is the classic salsa herb, but you can swap it out for parsley, basil, mint or chives.
  • Red bell pepper adds a nice crunch factor. Swap it out for any color your heart desires.
  • Lemon juice is a great sub for lime juice.

How to make

I love any recipe that requires one simple step to throw it all together. Here’s how to do it:

For pineapple salsa: Stir together fresh pineapple pieces, mango pieces, red onion, jalapeno, red bell pepper, lime juice and salt. Taste test for seasonings. Serve immediately or store in the fridge until party time.

I love to serve this with a giant bowl of tortilla chips as the appetizer portion of any Mexican dinner party, but it also makes a great snack to munch on between meals.

To really elevate any dish to new heights, mango and pineapple salsa is the perfect complement to blackened cod tacos, spicy shrimp tacos, steak tacos, chicken, vegetables and salads.

What really makes this fruity salsa recipe special is that it’s healthy and homemade. Many store-bought salsas sneak in added sugar, salt and unhealthy oils that are just not good in both flavor and quality. Stick to this at-home salsa recipe and you know exactly what it includes.

Storage and make ahead instructions

Leftover pineapple salsa will keep for up to 3 days in an airtight container in the fridge.

To make ahead for a party or fiesta, prep all the ingredients as directed up to 2 days in advance. The morning of, toss with the lime juice and salt and set to marinate in the fridge until party time. Although the salsa will keep for many days, I like to wait until the day of serving to toss it with the acid and salt so that the fruit holds its texture and integrity.

Recipe tips & notes:

  • Make sure the pineapple and mango are ripe. This will make for a flavorful, juicier, more vibrant salsa.
  • Change up the spice level. Keep as few or as many seeds in the jalapeno to amp up the spice factor. Or, go all out with serrano, Fresno or even super spicy habanero.

  • 1 cup diced fresh pineapple
  • 1 cup diced fresh mango 
  • ¼ red onion finely diced
  • 1 jalapeno seeds and ribs removed, minced
  • ½ cup chopped fresh cilantro
  • ½ red bell pepper diced

Juice from one lime

  • ½ tsp salt or more to taste
