To make the filling: In a large bowl, combine all fruit, sugar as needed, cinnamon, lemon zest, lemon juice, and cornstarch. Stir well and let fruit macerate while making the crumble topping.
To make the topping, in a separate medium bowl, combine the brown sugar, flour, oats, cinnamon, salt, and butter. Crumble together with your hands or with a pastry blender, until mixture is sandy and crumbles are about a nickel size.
Transfer fruit mixture to a medium casserole dish or cast-iron frying pan. Top evenly with crumble topping and bake uncovered for 35–45 minutes, or until top is golden brown and fruit is bubbly on the edges. Serve warm, with a scoop of ice cream.
