Ingredients

For filling:

  • 6-7 ripe peaches
  • 1 ½ cups cherries pitted 
  • cup granulated sugar
  • 1 tsp cinnamon
  • Zest of 1 lemon
  • Juice of 1 lemon 
  • 3 tbsp cornstarch 

For crisp:

  • ½ cup brown sugar 
  • ¾ cup all-purpose flour
  • ½ cup rolled oats 
  • 1 tsp cinnamon
  • 1 ½ kosher salt 
  • ½ cup cold unsalted butter, shredded 
  • Vanilla ice cream for serving

Instructions

  • Preheat oven to 375°F.
  • To make the filling: In a large bowl, combine all fruit, sugar as needed, cinnamon, lemon zest, lemon juice, and cornstarch. Stir well and let fruit macerate while making the crumble topping.
  • To make the topping, in a separate medium bowl, combine the brown sugar, flour, oats, cinnamon, salt, and butter. Crumble together with your hands or with a pastry blender, until mixture is sandy and crumbles are about a nickel size.
  • Transfer fruit mixture to a medium casserole dish or cast-iron frying pan. Top evenly with crumble topping and bake uncovered for 35–45 minutes, or until top is golden brown and fruit is bubbly on the edges. Serve warm, with a scoop of ice cream.

Notes

Note: Using a cheese grater to grate your butter helps your crumble topping come together in five minutes or less!
Entertaining Tip: You can assemble the crisp ahead of time, wrap it up tightly, and refrigerate until baking the morning of or the night
