Why You’ll Love This Peach Cherry Crisp

Whether I’m snacking on the fresh fruit, sipping on a cherry spritz or white peach spritz by the pool, or baking with them to make a classic cherry cobbler or peach upside-down cake, my kitchen is constantly stocked with these two staple summer ingredients.
Today I put the two of them together and made an irresistible peach cherry crisp! This sweet treat is made of a juicy fruit filling and a crispy, lightly spiced oat topping. It’s both bright and summery and cozy and comforting.
Although this dessert is so easy to make, you can also prepare it ahead of time and throw it in the oven right before you’re ready to serve it. Enjoy your warm crisp with a scoop of creamy vanilla ice cream – I can’t imagine a better way to cap off a lazy summer night!

How to Make a Cherry Crisp
Step 1: Preheat
Begin by preheating your oven to 375°F.
Step 2: Make Filling
In a large bowl, combine all the fruit, sugar (as needed), cinnamon, lemon zest, lemon juice, and cornstarch. Stir this mixture well and let the fruit sit and macerate while making the crumble topping.
Step 3: Make Topping
In a separate medium-sized bowl, combine the brown sugar, flour, oats, cinnamon, salt, and butter. Crumble this mixture together with your hands, or with a pastry blender, until it’s sandy and the crumbles are about the size of a nickel.
Note: Using a cheese grater to grate your butter helps your crumble topping come together in five minutes or less!
Step 4: Bake
Transfer the fruit mixture to a medium-sized casserole dish or cast-iron frying pan. Top the filling evenly with the crumble topping and bake it uncovered for 35-45 minutes, or until the top is golden brown and the fruit is bubbly on the edges. Serve your crumble warm with a scoop of ice cream. Enjoy!
FAQs
What’s the difference between a crumble, a crisp, and a cobbler?
Think of crumbles, crisps, and cobblers as members of a family. They all have the same basic components but they’re not identical. A crumble is typically made with a streusel topping, a crisp is usually made with an oat mixture, and a cobbler’s topping is more dense and dough-like.
Can I keep my crisp out overnight?
I wouldn’t keep it out overnight because of the fruit mixture. You can store it in an airtight container and leave it in the fridge for up to 5 days. Reheat it in the microwave, or enjoy it cold.
Can I make my crisp ahead of time?
Yes! You can assemble the crisp ahead of time, wrap it up tightly, and refrigerate it until baking it right before you’re ready to serve.
What can I do with extra peaches and cherries?
This question deserves its own section entirely because there are so many options! Get ready to get creative with your leftover fruit!
- The obvious choice here is pie! Both peaches and cherries make delicious pie flavors that everyone will love.
- If you don’t feel like cooking your fruit, use it as a topping for your Greek yogurt and granola! Or add it to chia seed pudding or your favorite cereal.
- Make your fruit into a compote or jam. You can also make a simple syrup out of it to use as a topping or to sweeten cocktails.
- Top your pancakes and waffles with your fruit, or drizzle on some jam or simple syrup!
- Elevate your peaches by grilling them! Heat them on a grill to give them delicious char marks and enjoy them with ice cream and/or whipped cream for a simple and elegant dessert.
