This Pineapple Coconut Spritz is a light, refreshing, tropical beverage that I just can’t get enough of. The coconut and pineapple make this drink feel thirst-quenching, but of course, the coconut rum and prosecco give it a bit of bite. Enjoy this fruity and bubbly installment in the Summer of Spritz series!
Fill a wine, large coupe or low ball glass with ice. Add pineapple juice, rum, lime juice, coconut milk, and simple syrup. Stir together and then top off with prosecco. Garnish with pineapple leaves and pineapple chunk.
Notes
For a non-alcoholic version, swap your coconut rum for coconut water and use sparkling water in place of the prosecco. You’ll have a fruity and tropical non-alcoholic spritz that anyone can enjoy!
