Pineapple and coconut are a match made in heaven! There’s something about those two flavors that instantly transports me to the tropics and makes me feel like a healthy fresh-fruit-eating queen. 

This pineapple coconut spritz is sweet-tart from the pineapple, while the coconut mellows it out a little bit so it’s not cloying. And I absolutely love adding some prosecco (or sparkling water!) to give it that refreshing bubbly feeling!

You can also make this drink in a large batch a couple of days ahead and then pour it over ice when your guests arrive to make your life easier.

Ingredients

This recipe calls for pineapple juice and you can use storebought or freshly made pineapple juice depending on how much time and energy you have. The remaining ingredients are all simple, so let’s get started!

For garnish, use some pineapple leaves, fresh pineapple chunks, or lime!

How to Make a Pineapple Spritz

Fill a wine (or large coupe, low ball glass, etc) with ice. Add the pineapple juice, rum, lime juice, coconut milk, and simple syrup. Stir everything together and then top it with prosecco.

Can I use fresh pineapple in this spritz? 

You sure can! I use fresh pineapple chunks for garnish/a snack in each spritz, but you can incorporate it in other ways as well. Try muddling it with the coconut white rum and then strain it into your drink for extra fresh flavor. 

How can I make a pineapple coconut spritz non-alcoholic? 

Swap your coconut rum for coconut water and use sparkling water in place of the prosecco. You’ll have a fruity and tropical non-alcoholic spritz that anyone can enjoy!

Can I use flavored simple syrup?

  • 1 oz pineapple juice 
  • 1 oz coconut white rum 
  • ½ oz fresh lime juice 
  • ½ oz coconut milk 
  • ½ oz simple syrup 
  • 2-3 oz prosecco
  •  

To garnish:

  • Pineapple leaves
  • Pineapple chunk
  • Lime
