Strawberry Goat Cheese Bruschetta

Strawberry Goat Cheese Bruschetta is juicy, fruity and tangy all in one bite. Toasted crostini is layered with soft goat cheese, sweet strawberries, sticky balsamic glaze and fresh basil leaves. The perfect appetizer recipe for all your spring holidays and summer parties!

Ingredients

  • 1 pound strawberries diced
  • 8 basil leaves thinly chopped
  • 1 tbsp honey
  • 1 baguette thinly sliced

Olive oil

  • 8 oz goat cheese  room temp
  • Balsamic glaze 
  • Basil leaves for garnish

Instructions

  • Assemble strawberries: Preheat oven to 425 F. While the oven is preheating, dice strawberries and place into a mixing bowl with chopped basil and honey. Stir together to combine.
  • Toast baguette: Brush baguette slices with a thin layer of olive oil on one side and place onto a baking sheet. Bake for 6-8 minutes, or until lightly golden and toasty.
  • Top with bruschetta: Spread a thin layer of goat cheese onto each baguette slice and top with 1 tbsp diced strawberries. Drizzle with balsamic glaze and finish with fresh basil leaves for garnish.

Notes

Make Ahead: Dice the strawberries and toast the baguette 1-2 days in advance. But do not add the basil and honey beforehand, or the strawberries will macerate and break down too much. Cover the strawberries and store in the fridge. Store the baguette in a plastic bag or airtight container at room temperature.
