I’ve got two really great reasons why I made this flavor packed salad AND you’re in luck! Because I am going to tell you both of them 😉

Reason One: For the last two weeks I have been in airplanes, long distance car rides, hotels and ate far too much restaurant food. And while I loved every minute of it my body needs a little bit of a reset. Whenever I come back from trips my body CRAVES all things green. I don’t mean lettuce on my in n out either. I usually feel like I should eat a bucket of spinach for dinner once I get off an airplane. But I suppose a YOLO is always in order while traveling. I’m trying to get better, I promise. 

Reason Two: This salad is perfect for Father’s Day tomorrow! Seriously when I think of father’s day I think of BBQ’s, pool parties, and picnics. Pretty much all things outdoorsy and all things summery! Unfortunately I had to send my Dad a Yetti coffee mug and a note for Father’s Day because we will not be in the same state on Sunday. But if we were, a get together surrounded by good food and good family would be ideal. If you’re looking for a fun dish to bring to a get together tomorrow try this Chipotle BBQ Chicken Chopped Salad. The base of my salad is made with Taylor Farm’s  BBQ Ranch Salad Kit. I love putting my own twist on salad kits like this. It makes my life so much easier and instantly turns the basics into a dish that is your own. 

I loaded the Taylor Farm’s kit with a grilled BBQ chipotle chicken recipe, grilled corn and creamy avocado slices. Something about having a big healthy salad for lunch makes me feel so energized the rest of the day.

CHIPOTLE BBQ
CHICKEN CHOPPED SALAD

For chicken marinade
1 – 1.5 Pounds of skinless chicken breasts
1 Cup of barbeque sauce
1 ½ Limes juiced
3 Tablespoons of olive oil
2 Tablespoons of freshly minced garlic
1 Tablespoon of honey or agave nectar
¼ Teaspoon of freshly ground black pepper
¼ Teaspoon of onion powder
2 Teaspoons of canned chipotle adobo sauce
1 Canned chipotle adobo pepper in sauce chopped & seeded

 For salad
1 Taylor Farms BBQ Chopped Salad Kit
1 Cup of grilled corn kernels
1 Avocado sliced
¼ Cup of chopped cilantro

Place all marinade ingredients into a bowl and let marinate for 30 minutes – 2 hours. Remove chicken breasts from marinade and lightly salt and pepper each side. On a grill or in a cast iron pan cook chicken for 8-10 minutes or until internal temperature reaches 165 degrees Fahrenheit. Brush with BBQ sauce and continue to cook for one minute.

Chop chicken and avocado and place on top of a Taylor Farms chopped salad kit. Add in corn kernels and extra pepper if desired.
