I have been meaning to share this recipe with you guys ALL SUMMER! We have had these chicken skewers on repeat in our apartment. I almost always pick some chicken up during my weekly grocery shop and they are so simple to throw together. I can have dinner ready in under an hour with the marinade and cooking time included!

I love this Lemon Oregano Grilled Chicken Skewers recipe because while it is super simple and packs major fresh flavor, they are also mega fun party food! Americans love to eat things off of a stick! Ha! Next time your at a lost for a pack of chicken, give this easy greek recipe a try. Also, DON’T skip the tzatziki sauce! It’s my favorite part!

Lemon Oregano Grilled Chicken Skewers with Tzatziki Sauce

1.5 Lbs of cubed chicken thighs or chicken breasts
3 Tbs of extra virgin olive oil +more for drizzling
Juice from 1 Lemon
1 Tbs of fresh minced oregano
1/2 Tbs of fresh minced rosemary
1 Tbs of fresh minced garlic
1 Tsp of kosher salt
1/2 Tsp of
8-10 BBQ Skewer Sticks
+Lemon Slices and Fresh Oregano for garnish

tzatziki sauce
1 Cup of plain greek yogurt
1/4 of a cucumber
1 Tsp of fresh garlic
Juice from half a lemon
1 Tbs of fresh dill, chopped
1 Tsp of pepper

For tzatziki sauce: Peel and dice cucumber finely (some people prefer to shred the cucumber). In a small bowl add all ingredients to combine. Chill in the fridge until ready to serve. 

Add olive oil, lemon juice, oregano, rosemary, garlic, salt and pepper to a large bowl and whisk to combine. Add in chicken cubes and let marinade for 30-60 minutes.

Lace chicken cubes evenly onto bbq skewer sticks. Drizzle a grill pan with olive oil and heat on medium high. Cook chicken on each side 4-6 minutes or until golden brown and cooked through.
