Breathing new life and happiness into pantry staple dishes has certainly been interesting over the last two months. Just like all of you, I’ve been taking simple things like canned beans, dried pasta, and ramen noodles and trying to make them into interesting meals as we’ve stretched our grocery store runs (I used to go to the store 3-4 times a week!). If you love ramen noodle recipes, this is the perfect pantry staple recipe!

I’ve also kept lots of eggs on hand because they are so versatile and nutritious, helping me to add a creamy, nutritious, and delicious layer to just about any pantry staple dish. If you have yet to try eggs from Happy Egg, this recipe may convince you otherwise.

  • The ramen noodles! I think it’s safe to say everyone’s got a package or two of ramen lying in their pantry, and switching it up from normal soup, to a stir fry is a GAME CHANGER. Be sure to cook your noodles super al dente so they don’t get mushy in the stir fry! Using dried ramen is the perfect ingredient for cheap ramen noodle recipes.
  • Kale yes! I used kale for a little added nutrition and texture, but you can use any veggie (fresh or frozen) you’ve got. Mushrooms, spinach, or bok choy also work great. 
  • The egg yolk. Whether you do a raw egg yolk right in the center of your noodles or fry up a crispy egg, it’s a must. The egg added richness and heartiness to this ramen stir fry.

What’s in Garlic Butter Ramen Noodle Stir Fry?

  • dried ramen noodles
  • butter
  • kale
  • garlic cloves
  • red chili flakes
  • soy sauce
  • honey
  • sambal oelek or sriracha
  • green onions
  • sesame seeds

How to make Garlic Butter Ramen Noodle Stir Fry

  1. Bring a medium pot of water to a rolling boil.
  2. While your water is boiling begin the stir fry. Heat butter in a large skillet on medium heat. Once butter is melted add in kale and cook for 1-2 minutes or until wilted. Add in garlic, red chili flakes, and cook for an additional 1-2 minutes.
  3. Boil the ramen noodles until they just begin to break apart, about 1-2 minutes.
  4. In a small bowl whisk together soy sauce, honey, sambal oelek or sriracha and add to kale mixture. Add noodles into the pan with the sauce mixture. Cook for an additional 2-3 minutes or until the sauce has thickened and noodles are well coated.
  5. Top noodle stir fry with an egg yolk in the center of the noodles, sesame seeds, and green onions.

Ramen Noodle Recipe with Egg 

The best part about this garlic butter ramen noodle stir fry is busting open the golden egg yolk on top. When the egg yolk is cracked it releases what I call ‘golden flavor’ making these noodles, rich, creamy, and buttery. 

When it comes to having eggs as the star of a meal, I love using Happy Egg Co Free Range eggs. These yolks could not be more rich and golden. Happy Eggs are large brown eggs that come from hens that roam on over 8 acres of pasture outside, which is so important considering most eggs at the grocery store come from hens that never even go outside!

This ramen noodle stir fry is vegetarian! Of course, you could add chicken, salmon, or maybe top it off with broccoli beef but my personal favorite is just with a fried egg or an egg yolk for an easy cheap ramen noodle recipes.

  • 2 bricks dried ramen noodles 
  • 3 tbsp butter 
  • 2-3 cups kale chopped
  • 5 garlic cloves minced 
  • 1-2 tsp red chili flakes 
  • 3 tbsp soy sauce 
  • 2 tbsp honey 
  • 2 tsp sambal oelek or sriracha
  • Green onions

  2. Just made this for dinner tonight. It was incredible! Can’t believe how well the flavors blended. I knew hubby would rebel at the raw egg yolk though, so I substituted sunny side up eggs. Definitely going into my permanent rotation. Thank you!

  3. So delicious, satisfying, and easy! I made (almost) vegan by leaving out the egg & using vegan butter. (Still used the honey though.)
