Cauliflower fried rice has taken our generation by storm. There isn’t too much you can’t make with cauliflower these days. Pizza, soup, rice, you name it!
The first time I ever tried cauliflower fried rice was the bagged version at TJ’s and I was hooked. That is until I realized how easy and customizable it was to make on my own!
I think now more than ever we love a good low carb / healthy recipe swap for our favorite dishes.

It’s punched up with fresh garlic, ginger, and soy sauce and sriracha for that Asian umami flavor that we know and love.

What ingredients are in cauliflower fried rice?
- cauliflower ‘rice’
- olive oil
- yellow onion
- carrots
- frozen peas
- garlic
- ginger
- sriracha or sambal oelek
- soy sauce
- greens (like kale or spinach) optional
- green onions
- sesame seeds
How do you cook cauliflower fried rice?
- Prep your cauliflower ‘rice’ (see below!)
- Heat olive oil on medium-high heat and add in yellow onion, carrots and peas.
- Add in cauliflower rice, garlic, and ginger and cook for an additional 3-4 minutes.
- Create a well in the center of the rice and add in two eggs. Slightly scramble them in the center of the pan. Toss together the rice with the eggs and add in sriracha and soy sauce.
- Top with sliced green onions and sesame seeds.
How do you make cauliflower ‘rice’?
Cauliflower ‘rice’ is made easiest in a food processor.
Roughly chop your cauliflower into large chunks and pulse in a food processor until ‘rice’ pearls form. Be careful not to overcrowd your food processor and to work in batches.
If you don’t have a food processor, you can chop your cauliflower until it is similar in texture, this is just a bit time consuming but possible!
Pro Tip! I like to grab a head or two when it’s on sale, and make pearls to freeze when I need them.
There are also plenty of pre-made cauliflower pear options (TJ’s has a good one!) and I’ll pick up a bag when I’m short on time.
What does cauliflower fried rice taste like?
Tasty AF! Cauliflower fried rice tastes very flavorful and delicious, I promise.
The ‘cauliflower’ flavor is masked by the additions of garlic, ginger, soy sauce and sriracha.
The taste is a bit softer than normal rice, but not mushy by any means. This is truly a low carb dish that makes lots of appearances at our house because you feel like you’re getting the real deal.
Is cauliflower fried rice good for you?
Yes! Cauliflower fried rice is good for you!
It’s nutrient-dense, packed with vegetables and naturally low carb. I love adding cashew chicken or a piece of salmon to the side dish to make it a complete meal.
Is cauliflower fried rice low carb?
Totally! Cauliflower fried rice is pretty naturally low carb. You’re swapping out regular rice (which has 45 carbs per cup) for cauliflower rice which has just 5 carbs per cup!
Can you freeze cauliflower fried rice?
Yes you can freeze cauliflower fried rice, but I recommend freezing it in its ‘raw state’ before it’s been cooked or else it can be a little mushy. In a freezer-safe container add cauliflower rice, onion, carrots, peas, ginger and garlic in a batch.
Remove from the freezer and cook for 4-5 minutes and then continue with steps 4 (where you add the eggs) and onward in the recipe.

ingredients
- 12 oz bag frozen cauliflower or ½ head fresh cauliflower riced
- 3 tbsp olive oil
- ½ yellow onion diced
- 2 carrots peeled and diced
- 1 cup frozen peas
- 3 garlic cloves minced
- 2 tsp fresh ginger minced
- 2 eggs
- 2 tsp sriracha or sambal oelek
- 2 tbsp soy sauce
- 1-2 cups greens like kale or spinach, optional

- To make cauliflower 'rice' (if using fresh cauliflower) cut into large chunks and blend in a food processor on low until ‘rice’ shape forms. Alternatively, you can chop the cauliflower until fine.
- In a large skillet heat olive oil on medium-high heat. Add in yellow onion, carrots and peas. Cook for 3-4 minutes or until the onions are translucent.
- Add in cauliflower rice, garlic, and ginger and cook for an additional 3-4 minutes.
- Create a well in the center of the rice and add in two eggs. Slightly scramble them in the center of the pan. Toss together the rice with the eggs and add in sriracha and soy sauce.
- For extra nutrition (totally optional!) I like to add 1-2 cups of fresh greens like spinach or kale at the end. Toss them together for 1-2 minutes or until wilted.
- Top with sliced green onions and sesame seeds.
