This homemade recipe for fire roasted corn and heirloom tomato salsa is filled with sweet summer corn, mango chunks, aromatic cilantro and a little spice! This easy salsa recipe comes together in just a few minutes and you will want to put it on everything! My favorites dishes to top this with are fish tacos, Alpha frozen burritos or straight out of the bowl with salty corn chips!

It feels so good to know that we have finally turned the corner into my favorite season of the year! The last few weeks have been filled with lots of travel so I am thrilled to finally get to enjoy the season for all it’s glory. We just got back from a quick weekend trip to Colorado for my cousins wedding. She got married in the middle of a farm field in an old historic barn. I traveled over with my Dad, grandpa and Jared and we had a blast.
I was photographing the wedding so the three of them went stag together like a couple of teenage boys at homecoming. I could NOT believe that my papa could dance the way he did, a true VIP of the whole wedding with those dance moves. I don’t get to take trips like that often with them so not only was it a fun wedding but it totally felt like a family reunion too. Nothing like taking tequila shots with your Aunt and future cousin in law at 8,000 ft of altitude. Ah, the memories.
If you’re new to the blog I should probably tell you that you will see quite a bit of Mexican inspired dishes on this platform of mine. Espeeeecially when it comes to summer! I love the big fresh flavors that mexican cuisine brings along and with summer produce in abundance its the perfect time to take advantage! Girlfriend also just loves margaritas and anything that goes with them, okay?!

This simple recipe has just a few fresh ingredients that will take any dish from regular to wow! Be sure to chop each ingredient similar in size for a well balanced salsa. Fire Roasted Corn and Heirloom Tomato Salsa
2 Cups of fire roasted corn (Trader Joes has a great frozen option!)
1 Cup of quartered heirloom cherry tomatoes
1 Cup of diced mango
1/2 Cup of fresh cilantro, chopped
1 Jalapeno, minced (more if you like it spicy!)
Juice from one lime
1 Teaspoon of kosher salt
1/4 Teaspoon of freshly cracked pepper
Toss all ingredients together into a medium sized bowl. Serve at room temperature or cold. Keeps fresh in the refrigerator for 4-5 days.
