One of my all time favorite meals to make for people is brunch. I was fortunate enough to feature my favorite meal with a gorgeous table scape brought to you by Cheeky Home. With a meal like brunch it is especially nice to have an easy clean up without losing a beautiful table esthetic. Sunday is my favorite day of the week and you better believe I want to spend my time with my feet up instead of on them doing dishes!
I’ll be honest I usually shy away from all things disposable but how great are the patterns on these plates?! They don’t even look like paper plates! You can find an array of different designs and patters exclusively at Target. But, I haven’t even told you my favorite reason why I love love loooove this company. For every package of adorable goodies that you buy, Cheeky will provide a free meal to someone in need right here in the U.S. I couldn’t be more on board with helping a great cause to end hunger.
brunch post. So by popular demand, here you have it! It’s the mother of all potato breakfast casseroles. Steamy, savory, and oh so cheesy. Its super simple too! Whenever I make this it’s gone. An extra great tip: I usually make it in my cast iron skillet and it makes for great flavor and presentation. A casserole dish will do just fine too!
Hash Brown Casserole
2 lbs of Frozen Hashbrowns
8 oz of Sour Cream
14 oz of Chicken Broth
2 Cups of Shredded Sharp Cheddar Cheese
1/2 Cup of melted Butter
1 Small White Onion Diced
1/4 Cup of Whole Milk or Half and Half
1/8 Teaspoon of Pepper
1/4 Cup of Chopped Green Onions
Preheat oven to 350 degrees Fahrenheit
In a large bowl combine all ingredients together, reserve half of green onions. Pour into a casserole dish or cast iron skillet.
Bake for 45-60 minutes or until the top is golden brown. Sprinkle the remaining green onions on top.
yields 10-12 side dish servings
