For the weeks that I haven’t even put mascara on or properly brushed my hair, it’s nice to know that I have at least filled my body with something nutritious and halfway decent. I’m not a #healthkween by any means but after I came back from England I was like… gimme green! gimme anything green! I felt so terrible. My face was broken out and my jeans were less than fitting. Needless to say I needed some meals that were nutrient dense but still filled with tons of flavor. 

My kitchen isn’t the only thing heating up this month. With graduation just about a month away the pressure is full throttle. Picture that action movie scene where the force from an explosion is hitting your favorite super hero and his / her lips are like uncontrollably moving up their mouth because the force is so strong… and their mouth is open.. and it’s ugly and you just want it to stop and change scenes. Thats how I feel. 

“So what’s your plan”? Wow. I never thought I could hate this question more than I do. I just wanna be like “What’s your plan? What’s the rest of YOUR life look like?”. I may almost have a degree hanging on the wall but let me tell you I’m taking each day, every twenty-four hours at a time. While blogging is my undying passion I’m not sure if I want to take the plunge and try and do it full time. It’s just like trying to purse music or acting. People give you this look like “what’s your real job?”. It’s tough. While I probably have two handfuls of crap I have to do right now this little blog is one of the best venting sessions I have had this week.. so thanks for bearing with. Now, ASPARAGUS!

I bet you didn’t know that it takes three years to grow a bunch of asparagus?! I don’t know about you but it makes me feel pretty fancy eating something that takes that long to grow… despite that it makes my pee smell weird. I kept the flavors super bright and may I dare say it clean. I hate using healthy words because I’m not in anyways a ‘healthy’ food blogger but I do like some variety! When I’m just cooking for myself I try to keep it healthy! Especially during crazy months like this one! Enjoy! xo

Lemon, Garlic & Parmesan Asparagus

1 Large bunch of asparagus
4 Tablespoons (one large drizzle) of olive oil
2 Tablespoons (about four cloves) of fresh garlic minced
Juice from half a lemon
2 Tablespoons of fresh flat leaf parsley minced
1/2 Cup of freshly grated parmesan cheese
Salt + Pepper to taste 

Preheat oven to 400 degrees Fahrenheit

Line a large sheet pan with parchment paper. Toss asparagus spears with olive oil, lemon juice, garlic, parsley and sprinkle generously with salt and pepper. Roast for 18-22 minutes until golden brown. Just before serving sprinkle with parmesan.
