Does anyone else think that Valentines Day should just be permanently on a weekend?! What’s with the 14th anyway?! Just another thing I’ll have to google when I should be doing something more productive, ha.
This year we have rented an Air B&B in Carlsbad just steps from the beach! This will be our first getaway since we moved to California and I am stoked. Not too mention the first ABB I have ever rented. The area seems really quaint. We are literally on the sand and a few blocks from the little village of shops and restaurants. We can also bring Rascal, so that’s a plus.
The last two Valentines Days Jared and I have spent them at home cooking for each other and going to the movies. We have this tradition that we switch off planning anniversaries and romantic holidays and it’s super fun. It’s fun for me at least! I love seeing what Jared plans up for us. Last year he planned out a full steak dinner that he was to cook on his own. Truth to be told I don’t even think he knew where all of the kitchen equipment was in his house, but the determination prevailed.

I was told to stay out of the kitchen until the meal was complete. About half way through I heard him curse quite loudly and I just knew something sour had happened!
He was making steak and heated the oil up so high that when he put the piece of meat in the pan it totally spattered all over his hand. I felt horrible! We ended up having dinner and rushed over to CVS for every burn cream available. Oil burns are no joke people!

While it’s always romantic and thoughtful to make your beau something delicious and sexy for dinner, don’t let it get too complicated! Your dinner should be tasty and even catered especially to your taste buds but whatever you do, don’t pick something with 10+ ingredients and a 2+ hour prep period! After all you want to eat and get on with your plans!
Which is why I have brought you fondue. For a few reasons I chose fondue as a Valentines Day dinner option. Reason one: I feel like EVERYONE wants to go to the melting pot for Valentines Day. Which is so weird because you get about 5 skewers of food and half a pot of mediocre cheese for an absolutely ridiculous price. But whatever, it’s one of those weird American things that people just love.
Reason two: CHEESE! Melty, delicious, warm, gooey and dare I say the sexist kind of cheese you can consume. It’s seriously wonderful. For all my veggies out there you can even make the whole night meat free.
Reason three: It’s actually really simple to put together. If you can boil water and grate cheese, well that’s half the battle right there my friend. The rest of it comes together quite easily. Add in all your favorite dippers, tons of candles and a bottle of wine and you’re pretty much set.
I kept the recipe super simple so you won’t have to fret about making the favored dish for your man or lady friend. Just a bunch of really good cheese, white wine and herbs. Classic Fondue for Two
2 Cups of dry white wine (pinot grigio works great)
1 Sprig of fresh rosemary
2 Sprigs of fresh thyme
1 Cup of Gruyere cheese, grated
1 Cup of swiss cheese, grated
1 Cup of Emmental cheese, grated
3 Tbs of flour
2 Garlic cloves
In a small dutch oven or heavy bottom fondue pot (I use this one for fondue) rub inside of pot down with halved garlic cloves . Heat wine and herbs on medium high heat until boiling. Toss together shredded cheeses and flour. Discard herbs from wine. Add in cheese a half a cup at a time and slowly incorporate all cheese in batches. DO NOT add all cheese at once. Transfer to electric fondue pot or place pot over sterno device if using a cast iron pan.
Serve with all your favorite dippers! Some classics that I always include are pretzels, cubed french bread, carrot sticks, and apple slices.
