Reporting to you from my couch, my squishy, tufted couch. I am wrapped up in a plaid blanket (courtesy a la Joanna Gaines for Target #iboughtthis). We had a very simple turkey burger-greek style and a kale salad. After dinner I wrapped myself up in the living room for a little late night work. I CANNOT tell you how amazing it feels to be home and back into somewhat of a routine. We even have an old Mary Kate and Ashley Olson move on, double double toil and trouble in celebration of October starting! The last few weeks I have been on the go. Like REALLY on the go. I spent a week in Pennsylvania for a family vacation and then a few days in Colorado. I came home for just a quick weekend and then I was off again to Fresno for a fruit farm photoshoot.
I take on a ton of other projects other than blogging mostly because I love them! I have known since high school that I wanted to create and style photoshoots. I have a hard time being more selective about projects and generally over pack my schedule on the regular. It is a horrible habit that I have adapted over the year of blogging full time. I think it mostly comes from being scared about income consistency. Being self employed brings out some weird stability feelings that make me over work myself. I’m lucky to have a wonderful assistant, Abbie, that helps me out in all spectrums of this business of mine.
But in all honesty this month has really go the best of me. My most recent project (other than my blog work!) is a 29 recipe project for Family Tree Farms. Yes folks, 29 recipes. We started out with a two day shoot at their farm last week and now we are diving into the rest of the recipes at home. They are currently going through a rebrand and were looking for new content to get their fresh website started. It is an exciting and fun project so far, just time consuming!
This week I plan on knocking out as many recipes I can and sneaking in computer work in the evenings. I am most looking forward to our trip to Disneyland on Thursday and seeing that new Bradley Cooper and Lady Gaga movie on Friday. We have Disneyland season passes and live only a few miles away so we try and sneak over there once a week. We mostly go for dinner and ride a few rides. Disneyland is one of the few places where I can really unplug. I am thrilled to see all of the Halloween decorations! I am hoping for a pretty low key night on Friday. Dinner and a movie sounds like perfection. This Bradley Cooper/Lady Gaga mash up really does look decent. I love seeing her in a new, more natural look. I think she looks gorgeous and Bradley Cooper is always a site to see. I’ll return back with my review!
Saturday morning I am carving out a little bit of time for a slow morning. I’m talking pajamas till noon, at least two cups of coffee and a thick stack of pumpkin spice french toast!

During this time of year I guiltily buy all of the Trader Joes pumpkin spice products, light as many apple/pumpkin flavored candles and pretty much can’t order any Starbucks drink with out 1 pump of pumpkin spice. Call me basic, I’ll embrace it.
The batter on this easy pumpkin spice french toast recipe is whisked together with eggs, cinnamon and pumpkin puree for a fall twist! Fry each slice up in a hot cast iron skillet and slather on my favorite whipped maple butter. Yum! - French bread
- Eggs
- Half and half or milk
- Pumpkin puree
- Pumpkin pie spice
- Vanilla extract
- Unsalted butter, softened +more for frying
- Pure maple syrup +more for serving

Pumpkin Spice French Toast with Whipped Maple Butter
ingredients
- 8 Thick slices of french bread
- 6 Whole eggs
- ¼ Cup of half and half or milk
- ½ Cup of pumpkin puree
- 2 Teaspoons of pumpkin pie spice
- 1 Teaspoon of vanilla extract
- ½ Cup of unsalted butter softened +more for frying
- 2 Tablespoons of pure maple syrup +more for serving
- 1 Cup of chopped pecans
instructions
- Place unsalted softened butter and 2 tablespoons of pure maple syrup into a large bowl fitted with a stand mixer and a whip attachment. Whip together butter and syrup for 30-60 seconds or until light and fluffy. Set aside or into the refrigerator until serving.
- In a large shallow bowl whisk together whole eggs, half and half, pumpkin puree, pumpkin pie spice, and vanilla extract for 1-2 minutes or until eggs are broken and whisked to a smooth consistency. Dip each slice of bread into the pumpkin egg mixture for 20-30 seconds. Heat a cast iron pan on medium heat with 2 Tablespoons of butter until melted. Add in 2 slices of french toast at a time and fry for 2-3 minutes on each side or until golden brown.
- Serve slices with warm maple syrup, whipped maple butter, and a sprinkle of chopped pecans.
