In my humble opinion, the best part of the holidays is all the baking, and decorating, and other delightful, mess-making kitchen activities. And if you’re like me, that includes tons of snacking and leftovers, too!

That’s what is so great about this quick and easy Gingerbread House Chex Mix recipe — you can throw it together in just 20 minutes, and it’s perfect for using up any leftover candies from making gingerbread houses or decorating Christmas cookies.

Now, all that being said, there is no reason you can’t make a batch BEFORE your holiday cooking adventures. This holiday snack recipe is super easy to customize — you can use any assortment of candies, nuts, dried fruits, and Chex Mix flavors.

Ingredients for Gingerbread House Chex Mix:

  • Rice Chex
  • Cinnamon Rice Chex
  • Unsalted butter
  • Brown sugar
  • Molasses
  • Cinnamon
  • Ground ginger
  • Ground cloves
  • Gingersnap cookies
  • Gingerbread house candies (gum drops, M&Ms, etc.)
  • White chocolate chips, melted

How to make this Chex Mix:

  1. Prep: Line a large baking sheet with parchment paper and set aside.
  2. Combine the Chex: In a large bowl add Rice Chex and Cinnamon Rice Chex and set aside.
  3. Create butter spice mixture: In a small bowl, add in butter, brown sugar, molasses, cinnamon, ginger, and cloves. Microwave for 30 second increments until the sugar is dissolved and the mixture is melted.
  4. Add mixture to Chex: Pour the melted butter spice mixture on top of the cereal. Microwave uncovered for 3-4 minutes, mixing after each minute until the cereal is well-coated and glazed. Spread onto a prepared baking sheet and stir in gingersnap cookies and gingerbread house candies.
  5. Drizzle with chocolate: In a microwave safe bowl, melt white chocolate chips in 30 second increments, stirring after each time until the chocolate is melted. Drizzle white chocolate onto cereal evenly and refrigerate until the mixture has hardened. Carefully break apart pieces and place into a serving bowl or dessert bags.

  • 2 tbsp brown sugar 
  • 1 ½ tbsp molasses 
  • 1 tsp cinnamon

  • ¼ tsp ground cloves
  • 1 cup crushed gingersnap cookies
