It’s no secret by now that I LOVE an easy salmon recipe for dinner. My cedar plank salmon recipe has been on a weeknight rotation since JULY! We still haven’t gotten sick of it. 

Consider this my Fall salmon (I’ll always love you cedar plank salmon). This roasted pistachio crusted salmon is everything I want in a simple salmon recipe. Made with only 6 easy ingredients and roasted to perfection for perfectly flaky, juicy salmon in every bite. 

Underneath the pistachio panko crust, is a flavorful lemon-dijon base that provides the perfect amount of zesty and sweetness to this salmon.

Ingredients for Pistachio Crusted Salmon Salad: 

To make this salmon you’ll need 1 lb salmon, lemon juice, dijon mustard, honey, garlic cloves, pistachios, panko breadcrumbs, olive oil, strawberries and a Taylor Farms Strawberry Rosè Chopped Salad Kit

How to make this Pistachio Crusted Salmon Salad: 

  1. Preheat the oven to 400 F. 
  2. Line a baking sheet with parchment paper. Place the salmon, skin side down. Season lightly with salt and cracked black pepper. 
  3. In a small bowl mix together lemon juice, dijon mustard, honey, and garlic. Spread evenly over salmon filet. 
  4. In a separate small bowl mix together pistachios, panko bread crumbs and olive oil. Press the ‘crusted’ mixture into the salmon filet evenly. 
  5. Bake salmon filet for 12-15 minutes or until fish flakes off easily with a fork. Allow salmon to cool for 5 minutes and place onto prepared Taylor Farms Strawberry Rosè Salad Kit.
