  • Smooth peanut butter
  • Brown Sugar

  • Vanilla paste (optional)

How to Make Flourless Peanut Butter Cookies

Step 1: Preheat and Prep

Preheat the oven to 350 F and line two medium-sized rimmed baking sheets with parchment paper. Set these aside for later. 

Step 2: Combine Peanut Butter and Sugar

In a bowl with a stand mixer (or with a hand mixer) add the peanut butter and brown sugar. Mix these two ingredients together on medium-high speed for 2-3 minutes.

Step 3: Add Remaining Ingredients

Add the eggs, baking soda, and vanilla bean paste (if using) and mix them into the batter for another minute until combined.

Step 4: Scoop Dough

With a 1-inch cookie scoop, add dough balls onto the parchment-lined baking sheets and create a crisscross pattern with a fork. Top the dough with a little extra brown sugar if you’d like. 

Step 5: Bake

Bake your peanut butter cookies for 8-9 minutes, or until the edges are slightly golden brown. Remove them from the oven and leave them on the baking sheet to set and cool for an additional 3-5 minutes. Transfer them to a wire rack to finish cooling. Enjoy!

  • 1 ½ cups smooth peanut butter 
  • 1 ½ cups brown sugar 
  • 2 large eggs at room temp
  • 1 ½ tsp baking soda 
  • 1 tsp vanilla paste optional

  • Preheat the oven to 350 F. Line two medium rimmed baking sheets with parchment paper and set aside. 
  • In a bowl with a stand mixer or a medium bowl with a hand mixer add peanut butter and brown sugar. Mix together on medium-high for 2-3 minutes. 
  • Add eggs, baking soda and vanilla bean paste if using and mix together for another minute. 
  • With a 1 inch cookie scoop, scoop dough balls onto the baking sheet and create a criss cross pattern with a fork. Top with a little extra brown sugar if desired. 
  • Bake for 8-9 minutes or until the edges are slightly golden brown. Remove from the oven and leave on the baking sheet for an additional 3-5 minutes. Transfer to a wire baking rack to finish cooling.
