- Baking Soda
- Vanilla paste (optional)
How to Make Flourless Peanut Butter Cookies
Step 1: Preheat and Prep
Preheat the oven to 350 F and line two medium-sized rimmed baking sheets with parchment paper. Set these aside for later.
Step 2: Combine Peanut Butter and Sugar
In a bowl with a stand mixer (or with a hand mixer) add the peanut butter and brown sugar. Mix these two ingredients together on medium-high speed for 2-3 minutes.
Step 3: Add Remaining Ingredients
Add the eggs, baking soda, and vanilla bean paste (if using) and mix them into the batter for another minute until combined.
Step 4: Scoop Dough
With a 1-inch cookie scoop, add dough balls onto the parchment-lined baking sheets and create a crisscross pattern with a fork. Top the dough with a little extra brown sugar if you’d like.
Step 5: Bake
