Hey there?! Anyone else’s house looks like it blew up with wrapping paper, baked goods and maybe even a few suitcases?! We are going a little nutty this week trying to get Christmas taken care of before we jet off to Philadelphia. This year we are spending the holidays with Jared’s family. This is only the second year I have been away from home on Christmas (the first time I was in England!). While I am sad I know it’s the right thing to do when you’re in a ‘serious’ relationship. It’s important to split the time and be fair. I’m just seriously hoping for a white Christmas! I have never experienced snow on Christmas and I am almost certain it would be magical! 

I can’t believe it is actually the week before Christmas. I am really happy to report that this holiday season has felt nice and long. While I can’t believe it’s almost over I feel like we really did have a nice few weeks of celebrating with our friends and family.  We are wrapping up (literally ha!) the last few details and each night our living room has turned into Santa’s workshop. I’m not complaining though! It’s jolly and I love it!

The only thing that puzzles me this time of year is what the heck I am going to make for dinner the few days leading up to leaving town and especially being so tired! The thought of cooking dinner after some of those long shopping days is exhausting! I just want to cozy up in front of the tree and get to my elf duties. I’ve partnered up with Alpha Foods to not only have a healthy plant-based protein dinner but also satisfy that light night craving that hits us all. 

Enter: The frozen burrito. Here on the College Housewife, I am certainly not opposed to taking a few shortcuts for everyday convenince when it comes to weeknight dinners. Sometimes we have weird smorgasbord dinners and other nights we have beautiful baked salmon filets but Monday-Friday we usually fall somewhere in the middle. On nights like tonight I love busting out these not only delicious but 100% plant-based burritos. The best part: Jared can’t even tell that they are vegan and better for him! Every bite is seriously so cheesy, melty and savory that you wouldn’t even know they were missing anything. Win win in my book! I pair the Mexicali flavor (our fav!) with a little homemade salsa that is seriously good on everything. If you’re looking for an easier and lighter comfort food option I would totally give them a try.

Now I’ve got a pile of clothes to pack, about 10 presents to wrap and a burrito to eat before we jet off to hopefully a winter wonderland! What are you guys doing for the holidays?! I hope that your house is as crazy and as Christmasy as mine right now!

Easy 5 Minute Salsa
1 16 oz can of fire roasted tomatoes, strained from the liquid in the can
1 Red onion, chopped
3 Garlic Cloves
1 Large handful of cilantro
2 Jalapeno peppers, deseeded
2 Teaspoons of garlic salt

Pulse all ingredients on low in a food processor or blender until desired consistency and flavor is reached. I like a chunkier salsa so I blend for less than a minute.  Taste test after first blend and add more salt or spice if desired.

  1. looks delish! i am SO about easy meals this week, I think I got all my grocery shopping done but pretty sure some items slipped away! enjoy your christmas, being away from family can be hard. we try to divide our time between Adam and my family, but going back to Australia this year was way too expensive so family christmas just us and Archie 🙂 merry christmas!
