Say hello to your next refreshing summer salad. While this deconstructed guacamole salad would be perfect alongside any Mexican dish it’s especially great for backyard bbq’s, fourth of July and even meatless Monday’s. 

Lately, I’ve been whipping up easy summer salads and using them as a flavorful topper for just about everything. I’m a salad lover at heart, especially of the Mexican variety. My Mexican Kale Caesar Salad and Chopped Tostada Salad are always on repeat at our house.

I wanted this deconstructed guacamole salad to feel like an even balance of guacamole and a regular salad. It has the texture of a crisp salad and all the flavors of guacamole.

Plus, you’ll spend less time mashing and more time eating. I’m all about a good lazy girl hack in the kitchen.

What’s in deconstructed guacamole salad?

So! Deconstructed guacamole is basically guacamole in its natural state. No mashing necessary!

Avocados: You’ll need plenty of avocados and instead of mashing them, dice them into large bite-size pieces
Heirloom tomatoes: These will help fill out the salad and give more flavors and texture
Red onion: Small bite size pieces of red onion, just like guac!
Chopped cilantro: A guacamole staple! If your one of those people that think it tastes like soap, leave it out. 
Garlic: For a little added flavor!
Lime Juice: For a nice zest and will help keep your avocados from browning

What can I top this salad with?

Fajitas: I love doing vegetarian fajitas and topping them off with deconstructed guacamole salad for a hearty meal.

Nachos: A staple at our house. This deconstructed guac tops perfectly onto any platter of nachos.

Deconstructed Guacamole Salad

Prep Time10 minutes
A chunky and fresh deconstructed guacamole salad. Basically, #lazygirlguac. Big chunks of creamy, cubed avocado, heirloom tomatoes, red onion, cilantro, and fresh lime juice. Perfect as is, with chips and guac or topped on a burrito.

ingredients
 

  • 4-5 Medium Avocados diced
  • 1 A cup of heirloom cherry tomatoes halved
  • ½ Small Red onion diced
  • 3 Garlic cloves minced
  • A handful of cilantro chopped
  • Juice of two limes
  • Salt to taste

instructions
 

  • In a large bowl gently toss the avocado, cherry tomatoes, red onion, garlic, cilantro, lime juice and season with salt to taste. I usually add in 1-2 teaspoons. 
  • Serve immediately or press plastic wrap against the salad and place in the refrigerator until serving.
