It’s no secret that I have a fondness for Mexican cuisine. Tacos, margs, guacamole – you name it, I love it. This watermelon and feta salsa is one of my go-to summer snacks, so I figured it’s about time to share the wealth. 

This recipe is so easy to make, and it’s full of simple, fresh, and flavorful ingredients. You will never catch anyone calling this fruit salad boring! Using watermelon as the moisture-rich base instead of tomato is a refreshing change from tradition, and it pairs perfectly with salty feta cheese!

You can eat this salsa with chips or as a side dish, and I highly recommend serving it with a watermelon tequila spritzer or a watermelon vodka drink. You’re going to love snacking on this watermelon salsa all summer long!

Fresh, fruity, and full of summer flavor! This salsa is full of simple ingredients that come together to have a party on your tongue. Feel free to make ingredient swaps based on your own preferences, but here’s what I use to create my ideal watermelon salsa:

  • Watermelon
  • Cucumber
  • Mango
  • Jalapeno
  • Red Onion
  • Seasoning: Lime juice, Tajin, feta, cilantro
  • Tortilla Chips

Variations and Suggestions

  • I think watermelon is obviously essential here, but you can swap the mango for a different fruit if you’d like!
  • If you want your dip to be more refreshing than zesty, omit the Tajin and add some mint leaves for brightness. It’ll be a delicious watermelon feta mint salad.
  • Want to add a little bulk to your salsa? Add edamame!
  • If you’re looking for a creamy texture, try adding some avocado.
  • I also love the idea of including corn, which you can fire-roast for even more flavor. 
  • Plus, you can never go wrong with beans. Adding all that fiber will fill you up fast, so I wouldn’t blame you if the salsa became your entire meal. 

How To Make Watermelon Salad With Feta

Step 1: Chop & Mix

Finely chop all of the ingredients and place them into a mixing bowl. Drizzle with fresh lime juice and Tajin seasoning. Mix until gently combined.

Since watermelon is so sweet, anything salty and savory can enhance the flavor in a beautiful way. I love adding Tajin, obviously, but you can also use salt, cayenne, or pepper. Citrus is also a great addition to this sweet fruit.

Putting Tajín on watermelon adds a burst of salty and spicy flavor! It’s not too spicy, which is why I think it’s the perfect crowd pleaser. It gives it a kick without being too hot. 

What other fruit goes well in salsa?

My favorite fruits to add to salsa are mango, pineapple, and peaches. In my opinion, they have the perfect texture, level of moisture, and flavor.

One of the things I love most about this dish is its versatility. Is it a salsa, or is it watermelon salad with feta? Depends on your perspective. Regardless, it’s delicious and you can create a robust menu around it. Let’s start with apps!

Since you’re already snacking on this recipe with chips, you might as well add some green chili queso to the menu! If you want to enjoy more fruit with similar flavors, try a Mexican fruit salad with chili lime seasoning

For your main dish, I think tacos are the answer. If you want to keep things vegetarian, go for Chipotle BBQ Jackfruit Tacos. If you want more spice, look no further than spicy shrimp tacos.
